Today we delve into the Regency world of Jane Austen in this new cookbook, Jane Austen's Table. This beautiful cookbook is full of tasty recipes that Jane Austen would've eaten (or had her characters eat!) at balls, dinner parties and picnics. I chose to make Mr. Woodhouse's All Apple Tarts and wasn't disappointed in the least!
Here's what you'll need:
12 oz Puff Pastry
2 Green dessert Apples-- I used Granny Smith
1 T Sugar
2 T Unsalted Butter
For the Apricot Glaze
3/4 c Apricot Jelly
2 tsp Lemon Juice
2 tsp Water
Roll out pastry. Use a 5" plate as a guide and cut around plate to make a circle from the dough. Place a slightly smaller plate on the circle and use it as a guide to create an edge. Place on a cookie sheet. Prick the centers with a fork and chill for 30 minutes. Meanwhile, peel and thinly slice apples. Arrange them on dough circles and sprinkle with sugar. Grate butter on top and bake at 425 degrees for about 25-30 minutes. Put jelly in a small saucepan. Add lemon juice and water. Boil for 1 minute, remove from heat and strain through a fine sieve. Brush over each apple tart while tarts are still warm.
