I do love baking (and eating) cake. My dad was a baker with a daily bread round. He had a very small bakery opposite our childhood home, complete with bread oven. Grandma's boiled fruitcake was a favourite of mine, I'm gluten free now and have yet to try it with GF flour, but I will!

When the weather starts getting cold I like to be in the kitchen. Sometimes I cook up a bunch of pumpkin recipes at one time to use up cans of pumpkin I bought on sale. Or I might need to use up some cake mixes that are getting close to being out of date. Then I make cakes or cupcakes.

Hi Jane. Your Ginger cake looks delicious. When I make a fruit loaf, I let it cool down completely and then slice the whole loaf, and then freeze it. You can then take out one slice at time, let it defrost or just toast it. Really works. Love your videos 💗

I slice my cakes before I freeze them, too, but have never tried toasting a slice, that sounds really good!

Thank you, you took me back to my childhood, mum used to make the date bars 😋 hers didn't have ginger in but that would make them even more amazing 😋😋 We grow up with only home baked goods, nanna always baked on a friday so we were always keen to get homefrom school, she passed on her love to me and I have passed it on to my daughter who makes lots of goodies now she has her own home.Thanks for yet another great video and for sharing the recipes. ❤

Great video and recipes. I am going to make each one of them because they sound and look delicious just by the ingredients. Yes I am a batch baker. I make cakes, muffins, quick breads, cookies, pies, pastries, donuts, English muffins. I have always done a once a month baking yeast breads and non yeast breads, sourdough and Herman starter breads and cakes. I make all of our sandwich bread, artisan loaves, dinner rolls. For instance I make 12 loaves of bread 2 are baked the others are shaped and frozen, same with dinner rolls some are baked as for brown and serve rolls some are shaped and frozen. I do the same with breakfast rolls like cinnamon, walnut sticky, caramel pecan. I also bake and decorate cakes, cookies, cupcakes and sold all kinds of goodies.I sell a lot for holidays.My mom taught me to bake bread when I was only 8 years old. I also have a dairy day when I make everything from sour cream to hard cheese. My heart is always happy when I’m baking♥️

Loved this one. Cleared my baking cupboard and found lots to use up. Made Lemon Drizzle cake, Banana Chocolate chip muffins and peanut butter cookies. These used up the gluten free flour and I forwarded for lunch box use for the grandchildren. There was also a can of Marmade that was transformed into marmalade. Today I will make Borrowdale Teabread, your date and ginger slice and coconut slice. I will put these in the freezer for use when people come for a cuppa. Pre-cutting into individual slices and freezing makes so much sense. Great tip.

Your cakes are looking great! My grandma and my father were confectioners and I inherited her love of baking. I often bake crumble with fruits or spicey muffins. They are so easy to freeze. I also bake cakes in little jars, put the lid on after baking, when the jar is still hot. You don't have to put these jars into the freezer. You can put them in your pantry for weeks or longer. Thanks again for your great ideas. make a nutritional banana bread thrice a month. We eat these slices madr with whole meal flour and keep it low fat. Sometimes I toss in some chickpea flour to boost the protein. If I have a zucchini I toss that in instead of one of the bananas . Just making do and saving our pennies. Always do batch baking like you I prepare everything to go in oven at same time.With energy prices going up its best to fill the oven. Yesterday I made 2 fruit cakes and a jam and coconut sponge!!

I do bake! Mostly bread, rolls and brioche but also cakes and muffins from time to time. Definitely batch baking and cooking… I don’t know how else the time constraints would work! Two years ago, I treated myself to a Bosch mixer that can manage dough with up to 2kg of flour and I double or quadruple recipes of breads and rolls so that we have plenty of rolls or slices of bread in the freezer. I also mix up an extra no knead dough that keeps in the fridge for a couple of days to bake in the middle of the week. Just this afternoon, I made galettes au blé noir (500g of flour!) and froze them flat and wrapped so that 3 at a time can be defrosted. Speedy warm dinner during the week 👍 I also made a loaf of bread, prepped dough for 2 others, tried my hand at Apfel Strudel (apples needed using up) and froze half the dough. 💪

I bake, I batch cook and I batch bake. We’ve just finished our summer school holidays and that was when I prepped for the term. As well as mains like schnitzel and mince dishes, I batched veggies bought on really good specials ( 30kg potatoes/ $10.50) and I cooked banana cake in slices and muffins, plain and date scones, chocolate crazy cake, sausage rolls, shortbread fingers, bread and rolls all in the freezer, I also prepped the wet part of whole orange cake and froze it and measured and bagged the dry part so I can just mix the two for a quick cake. I also portion my slices and cut loaves of bread and log cakes in half so it’s easy to have a bit of variety.

Not sure if it has been mentioned but, when putting a cake in a tin, it is usually easier to put it on the lid then place the tin upside down. It is so much easier to access and cut it later. You have to put up with an upside down tin but it's much easier.

Really enjoyed watching you bake cakes. I must confess that I don’t make many cakes at all as we don’t seem to eat them! I have made a few tray bake type cakes to slice but I find gluten free flour (which I have to use) makes them rather heavy in some recipes. I have had some fruit loaves that have resembled house bricks!! Glad yours turned out so well and looked really delicious! Thank you.

If I do bake on a rare occasion it's a box cake or brownie mix from the supermarket. I get them for a little over a dollar and add eggs and avocado oil. I try to stay low carb so I don't have flour or sugar in the house. My mom was an incredible baker and cook and my son and daughter are both great at it too. It skipped a generation with me : )

I used to bake A LOT but with the kids mostly gone and me not being a fan of sweets - not so much. I do make bread, rolls, etc. and often freeze them. Recently I started making sort-of healthy muffins and freezing to pull out for breakfast now and then. Last time it was pumpkin-chocolate chip and I'm doing gingerbread today. Can't wait!

Today I started baking cupcakes from the almond flour I have open in the pantry. And also flaxseed and almondflour focaccia and almondflour rolls. Tomorrow I wil make wafels and pancakes. All to freeze. As I eat grain free its nice to be prepared and have things in the freezer for busy days. And the freezer is little by little having some space again, because I did not have to buy any food, but just eat out of the freezer, which I stuffed with groceries on less price after Christmas...Kindly regards from the Netherlands and thank you again for the inspiration!

Great video! Last week I made peanut butter bread, brownies, sourdough bread and sourdough rolls. I used the oven for the sourdough rolls last, the other three went in the oven at the same time. I really enjoyed baking and I will be stocked for quite a while.

I love baking. Back in the day when I had 3 hungry teenagers plus hangers-on, I would batch bake once a month, and make 12 cakes in the Aga. I made most of them in loaf tins so I could get several in at once, but there was always heavy cake in a baking sheet as well. I used to make date slice sometimes, but the addition of ginger would have lifted it to a whole new level, I will have to try it one day.

I grew up with my mum baking and freezing all the cakes biscuits and slices for us to eat . She never bought store bought stuff ever it was always homemade and so yummy .. orange poppy seed was my favourite and cornflake cookies . I do the same for my kids now and it’s so much cheaper and tasty . My mum said it’s was healthy and good for you as it was homemade ❤️❤️❤️. Lovely video

this month I have also been doing a pantry challenge and tried each week to bake/cook up some treat to use up ingredients that were nearing the end of the expected life. Last week I cooked down some soft but not rotten apples to make some applesauce (which I love) and some "rubbery carrots to make a big batch of carrot soup, some of which went into the freezer for later. This week I finally cut up a pumpkin that has been sitting on my counter since October and roasted it. I pureed it all and about half of it I used to make a pumkin yeast bread, two loaves, one of which is in the freezer for next month (they are hearty loaves) and the rest of the puree is in the freezer destined to make a soup next month. I plan to continue the pantry challenge next month because it really helped me save a lot of money and I still have a lot to work my way through in the freezer and pantry. Thanks for the inspiration.

Ohhh now I need something sweet to have with my hot cuppa tea :) I really like the date and ginger slices. Those would be really nice to have on a long bike ride. Lots of energy from the dates. I make some oat/rice fruit squares that I make with seasonal fruit and freeze those for when we go on hikes or longer bike rides. I wrap them with some cling film(plastic wrap) when they're still warm so that it seals them up that way so easy to just grab and go and put in your pocket with no mess. Mmmmm... Gingerbread! When I make cookies, sometimes I freeze part of the batter so I can make cookies hot and fresh when I want. Usually it is chocolate chip or butterscotch molasses. I bake other things, like banana and pumpkin breads, Christmas cookies, and the like in the autumn.

Okay, here goes! I use American measurements, so I apologize if you use metric. Butterscotch Molasses Cookies: To start, Preheat the oven to 350F, and line a cookie sheet with parchment paper. In a large mixing bowl, sift 2 1/2 cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, 2 teaspoons ground ginger, 1/2 teaspoon ground cloves, and 3/4 teaspoon salt. After sifting, whisk the dry ingredients together and set aside. In a mixing bowl, cream together 3/4 cup butter that has been softened (not melted), 3/4 cup packed brown sugar, and 1/4 cup dark molasses (treacle) until fluffy. The mixture will be lighter in color. On low mixer speed, add 1 large egg and 2 teaspoons vanilla extract. Use a spatula to scrape down the side of the bowl occasionally. Next, add in the flour and spice mixture, and continue mixing on low to medium-low. Be sure to scrape down the sides of the bowl so all the flour and spice mixture is combined into the dough. Lastly, add one 12 ounce bag of butterscotch morsels (chips) to the dough and combine until the chips are evenly distributed. Using a small scoop or a tablespoon, scoop out enough dough to make a two inch ball (using clean hands, you will roll the dough into a ball shape between your palms). Take the now rolled dough ball and roll it in 1/4 cup granulated (white) sugar. Place the sugared dough ball on the lined cookie sheet, and spacing the balls about two inches apart from each other, fill up your sheet. Pop the filled cookie sheet into the preheated oven and cook for 11-13 minutes. Remove the sheet and allow the cookies to cool for a few minutes (they will continue to cook), and then remove them to a wire cooling rack. Enjoy!

Oooh fab video Jane, everything looks lovely. I have way too many spices going 'off'. I am a baker (of sorts) but since my OH and I are trying to lose a bit of lockdown flab I don't bake that often! But I did frugally wrap well and freeze my epic xmas cake (a Delia Creole Cake recipe) which makes me think why did I never do this before? It freezes sooo well and we simply defrost and slightly heat in the microwave - it's delish. You have inspired me as you always do - ginger cake here I come! 😊

I candy orange , lemon & lime peels for fruit cake add raisins and other dried fruits . Try growing your own hazelnuts filberts they grow on a shrub easy care . Affordable .

Good day Jane! Yes, I batch bake. Usually muffins or breads. I live in California. I am fortunate to get fruit year round. Last week a friend gave me 6 or 7 very ripe bananas. Now I have many lemons. I need to make something good out of them. So like you, I don’t like to waste. I made banana bread and muffins. Then froze some and shared some. I look forward to trying to make a fruitcake. i make gingerbread and wheaten soda bread frequently and freeze them as I am a widow living alone but frequently have pop in visitors....such a saving to have a freezer. thank you for your videos......from an Irish viewer

I make a big batch of chocolate chip cookies, bake some to eat now, and form the rest in little balls so they can be taken out and baked as needed. Super easy! I usually bake sandwich bread 2-3 loaves at a time and put 1-2 loaves in the freezer. Love your channel, Jane and Michael! 💜

My specials are apple and blackberry pie/crumble and chocolate brownies every now and then 😋 I also like to make a fridge cake with leftover raisins, glacé cherries, any leftover biscuits mixed into melted chocolate which is so easy to make, involves no cooking and freezes really well 🙂

Hi, Jane. Your baked goods look so delicious! Wonderful with tea I'm sure. I'm not much of a baker but I may as well start as my baking supplies hang around too long. Today I pulled out of my freezer a zucchini bread I made last month. You are quite right about baked goods freezing very well. The loaf sliced in half easily; I put the other half back in the freezer for some other time.

Great video Jane. I go thro fazes of baking cakes. Nothing ever makes it to the freezer tho. There’s always adult kids and grandchildren around devouring them. I’ve got quite a bit in my baking cupboard and you’ve now inspired me to get baking. I’m currently batch cooking some meals for one of my daughters who has just had her 2nd baby an adorable chunky 9lb 12.5 oz baby girl. A very welcomed addition to my family.

Thank you for sharing Jane, I’m not a baker but I am a batch cooker so thanks to you I will become a batch baker too. Going to try all of these recipes. The only thing I think I will change is that I will wrap the ginger cake in two slice packages so we can limit ourselves to one slice per day or I can see us eating cakes until we are the size of a house! Loving all your ideas thank you Jane.

They can be cut in half or quarters and the rest left in the freezer. Cake bars are good for just taking out what we need.

My grandma thought me a way to make flours last longer is to add a bay leaf to it , it prevents bugs.

Those all look delicious! 😋 I am a baker but I usually don’t have extra room in the freezer for storing sweet treats. I usually just bake something sweet whenever I get a taste for something. Those date and ginger slices sound like something that I would really like, actually they all sound like something that I would like so I’ll have to try them. I have not baked anything since Christmas when I made several different types of cookies to share with my family and friends.

I dont bake often, I am gluten free, as well as sugar free so recipes can be a bit hit and miss with all the substitutions! but I do have a good Chocolate Brownie Recipe that I like to bake. An inspiration as always Jane....

Everything looks delicious. I love to bake and I batch cook pies. In the fall my husband peels apples and we get 4-5 apple pies in the freezer for company meals over the winter. It is wonderful to have pie ready to take to a friends house too. In the summer I batch cook blackberries or peach pies for summer dinners on the patio. If I’m going to make one pie, I’m going to make two since cleanup is the most work of pie making.

My husband likes to bake bread with einkorn flour. I make oatmeal cookie bars and eat one every day. Flaxseed, wheat germ, Oatmeal ground into flour, almonds, chocolate chips, milk, vanilla, and olive oil. Everyone likes a breakfast bar at a reasonable price. I like to make an extra mix ready to dump and go. 💙

I too always store a cake on the cake tin lid and put the base on as a lid. Much easier when you want to use the cake.

I liked your baking store cupboard/pantry. Nice and big and easy to see everything. What you cooked looked so yummy. It was hard to choose my favourite. They all looked scrumptious. This is cake unrelated, but it’s inspired by your channel. It’s lunch time at the moment on Saturday 29/1/22 and this morning I bought a whole organic chicken. It’s cooking away on the stove top with some onion, celery, turnip and carrot. I’ll have some yummy chicken soup for dinner and for meals throughout the week. It’s Summer where I live, but I heard chicken soup is good for one’s immune system. With COVID still a threat to us all, I’m happy to cook and eat chicken soup on a hot Summer day, but with the air conditioner on : ) I must say, I’m proud of myself for thinking wisely and strategically about my grocery bill this morning, but I can’t take credit for this, I have to say thank you to you for inspiring me. Thank you for another enjoyable video 🥣🥚🧈

Great video and some good ideas. I bake every weekend for lunchboxes and never thought of freezing what I've baked or cutting in half and freezing it. I'm making lemon drizzle this Sunday 😋 I made ginger cake last weekend was absolutely delicious. You can't beat home baking. Just a thought maybe pop the fruit cake on the lid makes easy access for when you need cake..now! Ha ha

I used to batch cook cakes, but my son is currently working at a bakery after school. He brings home too much for me to also bake. I do keep slice and bake biscuit dough in the freezer though. I make a big batch of dough at once, then divide it into 3 or 4 and flavour each one differently. They then get formed into fat sausage shapes and frozen. When I want fresh biscuits I can sit them on the bench to soften a bit while the oven preheats, then slice and bake. I can have fresh biscuits whenever I want them and they are always great when I need to bring morning tea.

Now I'm no longer feeding growing boys with hollow legs ALL batch cooking of cakes and slices get sliced up and stored in the freezer. Being able to take out one or two slices of a cake means there's never a chance of wasted food, and of course they thaw out super quick. My hubby loves a slice of cake with custard too. Even the birthday cake I made last week ended it's life smothered in custard. 🎂

I have made many marmelades (apricot, peach, wild plum, fig, strawberry) the past 2 years and since we do not eat them in this form any more I found out online a cake recipe using a jar of marmelade instead of sugar and I will make no other cake until all marmelades are used up.

Except for Christmas as I said, none of the leftovers I used up will be any good if we leave them until next Christmas. We don’t have dessert just a main meal and as a Brit a piece of cake with a cup of tea Is eaten late afternoon. Other than that did you enjoy the video? Thanks for watching

I really should have given people more information. We only eat one course at meal times. We don’t have a lunch or evening meals with a dessert or a starter. We have our meat/fish with vegetables and no dessert at meal times. Brits don’t tend to eat a beef stew then a piece of fruit cake. We have far more treats at Christmas time and the dried fruits, flours, almonds, treacle ect are all leftover from that. Cake in the UK, is for teatime in the late afternoon or with a cup of tea mid morning and especially to be hospitable to guests. We might be frugal but we are not unwelcoming.

Tonight I made chocolate upside down chocolate sauce cake, the cake rises and you have chocolate sauce on the bottom. I had some cheerio cereal needed using up so it was rice Krispy squares but with cheerios. Left over pastry became cinnamon buns, left over chicken breast became chicken salad with onion, celery and mayo. My go to is usually scones, or brownies.
