I've used both Oreida and Lamb Weston, and really, they're both great. But, what you really want is the style of fries: crispy / restaurant style. It's out of this world crispy because they use one ingredient: rice flour. They coat the fries in it before frying, and it just makes them so crispy, you can't go back.

The funny thing is that fries aren't commonly eaten like this in Japan. You usually see these tricked out "super Japanized" preparations at overseas izakayas obviously because they're trying to stand out, but the local ones here usually just serve normal fries. The common flavors you'd find would be nori-shio (powdered seaweed and salt), consomme soup powder, maaaybe mentaiko butter.

If you want frozen fries and you can get yourself into a restaurant supply store like Restaurant Depot and you have a big enough freezer you can get frozen fries that are excellent and about as cheap as unprocessed potatoes. Also, personally I've come to prefer frying once I got T-Fal's fryer where you just turn a knob and it filters the oil into a storage box.

I've just discovered your channel. The only thing I don't like is that I wasn't subscribed from the start. I am a food nerd deluxe, and your format is just right for me. It's easy, well-explained, but not sloppy or half-assed. I was skeptical against air fryers at first, only turning to deep-frying for the best fries. But then I got a super deal on an air fryer for about 10 bucks, and now I think they make the absolute best fries if you use the right kind. The only thing that's a downer with air vs. deep-fried is the time. Thanks for the upload.

the really funny thing about that is Japanese are masters in frying almost everything to perfection... Except French Fries... for whatever reason they are most of the time under fried, at first I thought I was just unlucky a few times but my Japanese friends and even some other friends regularly going to Japan confirmed that, it seems for whatever reason Japanese like their french fries not as crispy and perfectly fried like the rest of basically everything they fry.

I am learning soooo much about what to look for at Asian food stores, thanks to your videos. I bet you have an H-Mart in your market; we don't have one in Minneapolis (yet)!

Hey, Aaron! Yeah, we have a few H Marts down here! They're really nice. I usually shop at Jusgo or 99 Ranch just because they're closer to me. But if I need really thick pork belly, I always go to H Mart. Great store!

I always use Golden currry, the hot version. And yes, I knew this cheat-code for cutting them up to small pieces. Reall good stuff!

I liked the nod to English chips and curry sauce, I was literally going to comment something like "We do a curry and chips in the uk but it's not nearly as fancy" lol

House Foods curry is so good for Japanese style. Kick it up with a little ketchup and yakisoba sauce for maximum flavor.
