I try to make sopa de gallina india (chicken soup) in Honduras from farm to plate. For the first step, I have to find a chicken on the farm and take it to Chef Mirna in Santa Barbara. When I get to the kitchen, Mirna gives me a butcher knife. I learn to sacrifice the chicken, pluck it, cut vegetables, look for firewood, prepare tortillas and make a stove.
The stove that chef Mirna uses is a Dos por Tres stove, a special stove designed by Proyecto Mirador. Two by Three stoves produce less smoke and use much less firewood. The organization has provided 300,000+ eco-efficient stoves in Central America, combating lung diseases, CO2 emissions and deforestation.
