Japanese Hotpot with Pickled Plum Flavor /
Guzai Tappuri ! Umeboshi Fūmi Oden
Season 1 - Episode 4
[ 1 Small Pot - 2 Serving ]
[ Ingredients ]
White radish ( Daikon ) - 1/2 root
Firm tofu - 200gm
Konnyaku ( Konjac ) - 1/2 piece
Kelp ( Konbu ) - 1 piece
Grilled fish cake ( Chikuwa ) - 2 pieces
Green soy bean - 16~20 pieces
Boiled egg - 2 pieces
Pickled plum ( Umeboshi ) - 1~2 pieces
[ Seasonings ]
Japanese Dashi - 500cc
Sake - 2 tablespoons
Mirin - 1 tablespoon
Soy sauce - 1/2 tablespoon
Sugar - 1 teaspoon
Salt - 1/2 teaspoon
[ Cabbage Roll ]
Minced pork meat - 300gm
Ginger paste - 1 teaspoon
Spring onion - 1/2 root
Salt - 1/2 teaspoon
Egg - 1 piece
Cabbage - 4 slices
Uncooked spaghetti - 2 sticks
* if have make extra can keep in a refrigerator !
[ Preparation ]
1. Add the Dashi into a earthenware pot.
2. Add Sake, Mirin, soy sauce, sugar & salt. Can add pickled plum if have it.
3. Cut the white radish into roughly 4 cm thick rounds, remove the skin with peeler if is thick. Trim off the corners, so that there are no sharp edges. Make a crisscross incision halfway into one side of each round.
4. Place the white radish in a pot filled with a amount of water & bring it to a boil until soft. Once soften, take out & rinse in water to remove the smell.
5. After blanched the cabbage leafs, trim off the fibrous stem & finely chopped.
6. Season with salt in minced pork meat, stir well until sticky texture. Add ginger paste, egg & chopped cabbage stems.
7. Divide the meat mixture in 4~6 portion, spread the stuffing in the middle of the cabbage, roll it up & sealed with a stick of uncooked spaghetti.
8. Cut the firm tofu into bite size pieces, use cooking torch gun to get broil.
9. Slice light cut on the Konnyaku surface & blanch.
10. Make a knot for the kelp.
11. Put the blanched green soy beans into a grilled fish cake hole.
12. Place all the ingredients in a pot except grilled fish cake, cover with lid over low heat & simmer for 5 minutes.
13. After 5 minutes, flip over all the ingredients & continue to simmering for 3 minutes.
14. Last, add the bamboo ring, cook for a while & ready to serve ~ !

* can adjust the seasonings to the taste of liking ! Add pickled plum can enjoy a refreshing of sourness flavor !
* can enjoy the soy bean delicate flavor after broiled ! Also can bake in oven or pan fry over high heat.
* can serve with Udon noodles for the left over broth, very tasty !!
