A man in Japan has done what French gourmets thought was impossible.Toshihide Takase, 76, has spent half his life figuring out how to farm a particular species of snails. The species, which is used to make the French delicacy Burgundy escargot, is at risk of extinction and is particularly hard to breed. Can Takase’s home-bred snails rival the taste of snails foraged in the wild?

There are people very successfully farming Helix Pomata in Europe. As child my grandmother once in a while send me out to forage a bucket full. She fed them a few days on milk. Afterwards they found their doom in a delicious soup or brazed in their shells with garlic butter. Nowadays it is forbidden to forage them in our area. We children played with the snails setting them on top of a wooden fence in one large line or using them for snail races. There were lots of them in our garden.
