FUKUOKA, JAPAN - Welcome to Fukuoka, on the island of Kyushu, in southern Japan, and this is one of the capitals of Japanese street food in the country. They have done an amazing job to preserve the culture of “yatai” or portable street food stalls that set up in the evening across the city. Tonight we’re going on an ultimate Japanese street food tour in Fukuoka, going to 5 different place for 5 Japanese dishes and I can’t wait to share all the food with you now.
#1 Yaki Ramen
Location: Kokinchan: goo.gl/maps/AMGdvUadJR6JbFwi6 - We’re starting off with a famous yatai stall where they invented the original yaki ramen - or fried ramen. It was definitely new to me, I thought it would be more of a dry fried noodles, but it was rather a wet and soup fried noodle dish. Amazing, as were the other dishes.
Price - 2,650 JPY for everything
#2 Gyoza
Location: Yatai Mamichan: goo.gl/maps/dwSFjcZea59H947D8 - You can go on a Japanese street food tour without eating gyoza, and Yatai Mamichan is one of the best places to eat them. The chef is amazingly skilling, cooking everything on his own and darting from station to station. Part of the great thing about eating at Yatai is being right in front of the cooking and interacting with the chef.
Price - 8,450 JPY for 5 people (we ordered a lot and lots of drinks)
#3 Tempura - Next, I’m not totally sure of the name of this place, but they are known for their tempura, battered and deep fried seafood and vegetables. It was a little oily, but still quite tasty.
Price - 1,100 JPY
#4 Hakata Ramen
Location: Yatai Kiryu: goo.gl/maps/RB5UQkK8wFUG8TTX6 - Hakata ramen, or tonkotsu ramen is one of the most common and popular dishes in Fukuoka and you’ll find Hakata ramen served at nearly all yatai food stalls.
Price - 650 JPY per bowl
#5 Yakitori
Location: Yatai Kawachan: goo.gl/maps/5jzCzVt4VwHJ7hGS7 - Finally we ate at a place called Yatai Kawachan, known for their yakitori, or grilled chicken skewers. It was a quite a selection of different skewers from gizzard to hot dog.
Total price - 4,400 JPY for everything with drinks
The yatai street food culture in Fukuoka is one of the great Japanese food scenes in Japan. Let’s hope generations continue to take pride in their food stalls and preserve the yatai culture.
Thank you to Visit Kyushu (www.visit-kyushu.com/en/) for helping me organize this food tour.

What really makes yatai so special is the niche it fills in Japanese food culture. That of street food, cooked fresh, on the sidewalk...as its done, say, in Saigon or Bangkok. You could probably get the same food or things similar to it at actual brick and mortar restaurants in Fukuoka; but, there is something so charming about getting them at one of the sidewalk stalls. And, those vendors work so hard. The entire structure, the cooking apparatus...everything has to be erected before service begins. Then, the owner/chef buzzes around merrily to serve his or her eager customers once they flood in. Japan needs to preserve this culture.

What are the Ingredients of Yaki Ramen? Most of the time Mark will walk you thru what you are watching as a dish is prepared...not this time. I LOVE the way Mark eats Ramen. He shoves the noodles into his mouth and doesn't care how long his noodles are or how much he has to consume to get the FULL Flavor. FANTASIC! His LAST stall was Amazing. Yakitori is one of my favorite dishes in other parts of the world....not often but available...YUMMY!

I've been watching Mark for a while now. He taught me that the best way to truly connect with another culture is to ENJOY their food, not just try it. That's easier said than done. What Mark is doing is something I have never seen anyone do before. He truly connected and lived with people of all cultures in ways few people can. When he tries new dishes and cuisines, he tries his best to indulge in them the same exact way the locals do. And you can easily tell that he really loves it! Love you Mark!

Hi Mark, Welcome to Japan! (I have never been to Hakata though) I think the citrus pepper condiment you ate at the first Yatai is "Yuzukosho". Fresh green chilies fermented with salt along with Yuzu. I love to put it in Udon. You can use it cooking all around. I highly recommend! (You can buy them at supermarket. Fundokin brand is great, also maybe there are regional brands.

• Fukuoka is the capital of Japanese street food in Japan • The yatai stalls set up every day at around 6 PM • Mark visits five different yatai stalls, each specializing in a different dish • He tries the original yaki ramen, which is a signature dish at the first yatai • He enjoys the omelette made with menta (spicy fish roe) at the second yatai • The third yatai is famous for its tempura, including shrimp, eggplant, fish, and peppers • The fourth yatai specializes in Hakata-style ramen with thick pork bone soup • The fifth and final yatai serves yakitori (grilled chicken skewers) and pig organ soup • Mark enjoys the delicious food, the friendly people, and the traditional yatai culture in Fukuoka

For his reference 6:01 Japanese mustard, "karashi." stronger than Western mustard. 6:52 ”Yuzu kosho," made from chili and yuzu peel, etc. 8:48 "Mentaiko," spicy cod roe. 11:15 "Benishouga," ginger pickled in vinegar with umeboshi, so it's red. 12:37 it's more like Ten-Ichi. This "Ten" and tempura has a same kanji. 13:55 ”Daikon oroshi," grated Japanese radish. It may be slightly tangy. 15:15 green pepper 23:06 Strange enough but what he says "hot dog" is called "frank(furter)." 24:21 "Tsukune." You can take it as a chicken meatball but eggs are used, and tsukune has fish version.

I love MWs videos anywhere in the world its a joy to see you eat ...and the amount of chillies you can eat I wish I could too. But you are slowly converting me to eat the food with chillies. Its amazing. You have converted me. And I have learnt a lot of cooking from your shows. I come from an orthodox Indian Asian family in Kenya but I have learnt to eat good food from your shows.

So much respect for the food and for the local people. Mark you're a lovely human and someday I hope to sit down in Japan and have a nice meal with you! Godspeed and God Bless!
