Here is what you'll need!
Fluffy Jiggly Japanese Cheesecake
Servings: 6-8
INGREDIENTS
⅔ cup (130 milliliters) milk
4 ounces (100 grams) cream cheese
7 tablespoons (100 grams ) butter
8 egg yolks
½ cup (60 grams) flour
½ cup (60 grams) cornstarch
13 large egg whites
⅔ cup (130 grams) granulated sugar
Parchment paper
Strawberries, to serve
Powdered sugar, to serve
PREPARATION
Preheat oven to 320°F/160°C.
In a small pot over medium heat, whisk the milk, cream cheese, and butter until smooth. Remove from heat and cool.
In a large bowl, whisk the egg yolks until smooth, then slowly drizzle in the cream mixture, stirring until evenly combined.
Sift in the flour and the cornstarch, whisking to make sure there are no lumps.
In another large bowl, beat the egg whites with a hand mixer until you see soft peaks when lifting the mixer up from the egg whites.
Gradually add the sugar while continuing to beat until you see hard peaks when lifting the mixer up.
Take about ¼ of the egg whites and fold them into the egg yolk mixture, then repeat with the remaining egg whites until the batter is evenly combined.
Place a 4-inch parchment paper strip around the edge of a 9x3-inch cake pan that is already lined with parchment at the bottom. If you are using a springform pan, make sure to wrap the bottom and sides completely in foil, twice, to prevent any leakage.
Pour the batter into the parchment-lined pan and shake to release any large air bubbles.
Place the filled pan into a larger baking pan or dish lined with 2 paper towels at the bottom. The paper towels ensure that the heat is distributed evenly along the bottom of the pan. Fill the larger pan about 1-inch with hot water.
Bake for 25 minutes, then reduce the heat to 280°F/135°C, and bake for another 55 minutes, until the cake has risen to almost double its height.
Remove from oven, and carefully, invert the cake onto your dominant hand and peel off the paper. Be extremely careful, the cake will be hot. You can also invert the cake onto a plate, but this will cause the cake to deflate more.
Sprinkle the top of the cake with powdered sugar, slice, and serve with strawberries while still warm!

I’ve made this recipe about 4 times.. done multiple variations and I think I found one that’s delicious. Substitute these in instead: 6 oz of cream cheese 1 tsp vanilla extract in cream cheese mixture 10 eggs whites 1 cup of sugar Bake it the same; this one has a better cheesecake flavor rather than a strong egg taste.

no, it's actually really good. they sell it at every asian bakery in LA, and it's like a subtle cheesecake with a fluffy melty texture. done well, it's delicious, but i've had my share of overcooked ones

Ijust made this. IT WORKED! I'm not sure about why some people had trouble with this. I followed the gram measurements in the recipe in the description instead of the measurements listed in the video; so maybe that might be what the trouble is. It turned out very fluffy, moist and bouncy; like a lightly sweetened cloud. I did choose to add vanilla bean paste to the egg yolk mixture so there could be a defined flavor and not just egg and sugar. My family loved it!

Nope. I immediately tipped the cake from the pan and pulled off the parchment, then ate a slice while it was still a little warm. It was equally delicious after being refrigerated, just slightly more dense in texture.

The trick to make perfect japanese cheese cake is to makesure using the room temperature eggs..wipe clean and dry the bowl for eggs whisking. during whisking the white eggs put some lime juice or 1tsp cream of tartar. The perfect meringue later than pour into the cheese and yellow egg and mix together slow and evenly. Do not overdo doing it. I make it many times. it is easy and ingredients easy to find. (Sorry for my bad english)

For anyone making it, they beat the eggs too stiff. You can see they have trouble mixing it, allowing too much air escape, and the middle bottom of the cake turned out dense due to this @1:23.

frazzled pots75 I think you can replace all the flour with more cornstarch. Just replace the flour with half the amount of cornstarch, since cornstarch thickens up twice as much as flour, and you should be able to make it. Have a nice day!

I JUST MADE THIS CAKE (it’s in the oven currently) and I promise you, you’ll need at least 40 years of baking experience that I don’t have. This cake is a MONSTER (personally) for beginners. Quick tip: I used 8 egg yolks AND whites so the egg taste would form into a creamy cheesecake taste.

You have to make sure the egg whites are forming peaks when you beat/mix them, and you have to carefully fold in the egg whites into the other batter to just combine it and not take the air out of the egg whites. I've made it and it wasn't completely round on top, but it tasted like it was supposed to, not just like eggs but a lightly sweet and cream cheese flavor. It won't taste like a New York style cheesecake. It would be more like a very soft pound cake for someone who hasn't tasted it before.

The video made this look so easy. I've tried twice now to make this just like the video showed, and it's been a total failure both times. Apparently, I need to increase the 280 degree baking time to about 80-90 minutes instead of 55, because the bottom half looked like the end result of a How To Basic video. Also, for the part that did bake fully (got that much the 2nd time at least), it just tasted like an egg with a little sugar mixed in. There's so much egg in this that I couldn't even taste the cream cheese, butter, or anything really (another popular Japanese fluffy cheesecake recipe I found uses about half as much egg, so others watching this may want to look that one up instead). My regular cheesecakes turn out awesome and don't even need a water bath, so I think I'll just stick with what I know and pass on this one.

I made it, not perfect, but can eat most of it! It's quite eggy taste, I added dusted sugar on top! What I'd next time, bake it longer probably extra 30mins ( because some of bottom layer not fully cooked yet) , less egg, and add vanilla essence,

To the people who are professional cooks, etc: Why does my cake taste like eggs when it comes out of the oven? 1) I tempered my eggs. 2) I lowered the temp of the oven at the time required. 3) I put it on a water bath as well. Also, the cake develops this kind of custard-like thing at the bottom of the cake. Any advice?

Yes your cake is overpowered by the egg flavor therefore you must balance flavors in this bread by adding 1-2 tbsp of vanilla extract and some orange zest and those ingredient will balance the flavors

this cake recipe was not good it tasted like eggs and i didn’t like it at all. i followed all the steps, measured it properly and it looked exactly like the final product in this video. i served it to my friends and family and it tasted like fancy eggs not at all like a cheesecake. it looks fantastic but tastes like trash. i don’t recommend this recipe. if you really want to make it maybe add vanilla or some flavoring because this cake is severely lacking it. i will not be making this again.

I just made this, followed the recipe exactly. It's jiggly and the half of it is fluffy. The bottom of the cake turned out like an omelet, with no fluffy texture at all. I also added 2 vanillas because i thought that the cake will smell like an egg. I was completely right. The whole cake tastes like an egg. As a result i can't eat that. I think that the yolks wanted more whipping and the whole recipe many vanillas, but I'm not willing to try this again. Total impression: 3/10😢

@@nickypianostarI've made it several more times since I posted this comment and turns out for me it was cuz i made it with a springform pan before. When i tried baking it in an aluminum foil pan i didnt get that problem anymore but I've read a lot of posts and it's really about incorporating your meringue into your batter gently. Also the tempature, don't open your oven door often. 🤪 Trial & practice! Good luck!

One of the biggest issues is that you CANNOT mix the milk/creamcheese/sugar/etc mixture into the eggs while the mixture is still hot, or you will cook the yolks, completely ruining the batter. They didn't really state it here. I'm sure you can use less eggs, too, but it wouldn't be as "jiggly", but definitely still fluffy and smooth.

The real source of failure for most people is the folding process. Under mixing means the layers of cake separate during the baking process, making it look like water got into the cake pan and created a cheese like cake bottom. Adam Ragusea’s has a video on how folding eggs white is BS. Don’t fold the egg whites in unless you’re a professional pastry chef with decades of experience. Just blast the batter and egg whites together with your mixer!
