It’s 3am here Al, and my mouth is drooling - lucky I have scrummy cook ready to do in the morning, some pork shanks, each surrounded by super dry skin for some crackle But that cooks superb, as always - Hope you’re having a funderful time down south

You could - but there's no need to do that with Wagyu beef. A better option is to inject that tallow into lesser cuts of beef to make them shine!

I’ve got an egg and I have always heard to wait for they clean blue smoke. But if you watch the videos from all the top Texas bbq joints, they throw the meat on immediately and specifically say they want they dirty smoke in the beginning. I don’t have a sophisticated sense of taste to tell the difference, but does anyone have any opinions on that? Does it really make a difference?

Yummm! Question, though please! SDBBQ puts his smoking wood underneath the charcoal in the middle. Is there a reason why you put your differently? Thank you!

You're very observant! James uses mostly small whole splits that he got for his COS - and putting multiples around the edges would be too much smoke. I like smaller chunks around the sides to slow down the whole process but either one will yield delicious results!

You didn't set up the Double-Indirect the way James does using the SloRoller, but it's interesting.

There's a different setup for a Series II and Series III. I'm guessing you've seen James Big Joe III setup. Not only is this his Big Joe II setup, he literally talked me through it :-)
