Looks like it would be very, very good. My only problem would be that I would have to cook the bacon more. I don't believe that the bacon is cooked well enough. But if you cook that bacon some more I believe it would be very very good.
That was my concern too. Looks like the bacon was a little undercooked for my taste. Otherwise looks like it would be great. Maybe broil the bacon a little beforehand.
That bacon looked to be much thinner than what is usual from an American grocery. Maybe using microwave bacon would give the desired result? Or use Canadian Bacon?...but you'd probably want to chop it some to be able to turn the tortilla.
Here in Calif, we eat stuff like that all the time. I would precook the bacon and crumple it up, add some tomato and avocado pieces, and maybe a bit of salsa.
Cook the bacon longer , flip it over ,then do the rest . I like bacon cooked until it's almost crispy . I will add a few chopped mushrooms too ....getting close to being an omelette here ..... :-))
Nice wholesome recipe although think I'd cooked bacon little more before adding eggs as I like slightly more crispy bacon, however that's just my taste buds but great ideas you create.😀

That's so tasty (and easy) Nata. We've made it with both flour and corn tortillas and found the corn ones to be the winner. - from bwob in the People's Republic of California.
It looks like a good idea but I would fry the bacon by itself and drain off the fat and then pour the eggs over it. It is also a good idea to wet the tortilla by just passing it through a shallow pan filled with water to keep it from drying out. I use Mexican cheese instead of the stuff he uses.
Me too. I often make a bacon omelette (sometimes with onion). I cook the bacon longer -- works just as well. I might well try the addition of the tortilla but I have no time for flavourless mozzarella, so would more likely add salsa. If properly made it will still stay folded, and if it doesn't, so what. Serve it flat.
Remarkably awesome way to cook bacon, sausage, or even ham & even try some different types of veggies peppers sweet or spicy or mild, corn tortilla, but this recipe gives me some yummy recipes ideas thanks alot! Jim Greszczuk ❤️
I do my bacon in the air fryer. When it’s done, drop them in the frying pan, add eggs and the rest of the ingredients. I never burn bacon in my air fryer, and it’s always done, perfectly.
