Love Justin Wilson, but one tablespoon of celery, one tablespoon of green pepper, and 6 whole onions is not exactly a traditional jambalaya mix. The "holy trinity" is there, technically, but only technically. If you want something closer to a traditional mix, a ratio of 2:1:1 between onion, celery and bell pepper is more in line, and it's a little bit better for you, since you get more vitamin C from the peppers, more fiber, and fewer carbs. 1:1:1 is even healthier. Cook it however you prefer though.
