To Make Kadai Vegetable Sabji
Potato - 1 Cup
Beans - 1/2 Cup
Carrot - 1 No.
Cauliflower - 1 Cup
Green Peas - 1/2 Cup
Capsicum - 1 No.
Fennel Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Red Chilli - 2 Nos
Onion - 2 Nos
Ginger Garlic Paste - 1 Tsp
Tomato Puree
Turmeric Powder - 1/4 Tsp
Kashmiri Chilli - 2 Tsp
Coriander Powder - 2 Tsp
Cumin Powder - 1 Tsp
Pepper - 1 Tsp
Amchur Powder - 1 Tsp
Salt - 1 Tsp
Oil - 2 Tbsp
Water -1 Cup
Fresh Cream - 1/4 Cup
Garam Masala - 1 Tsp
Coriander Leaves
METHOD:
1. Take oil in a kadai.
2. Add chopped potatoes, beans, carrot, cauliflower, green peas.
3. Keep the flame on a medium and roast the vegetables for 5 mins.
4. Add salt and mix. Add the chopped capsicum, saute for a bit and keep the sauteed veggies aside.
5. To the same kadai, add oil, fennel seeds, cumin seeds and cut red chillies. Saute.
6. Next add the finely chopped onions and saute until they are golden brown in color.
7. Add ginger garlic paste and saute.
8. Add tomato puree and cook until the excess moisture has evaporated.
9. To this, add turmeric powder, Kashmiri red chilli powder, coriander powder, cumin powder, pepper powder, amchur powder and salt by keeping the flame on low.
10. Mix it all well and add the cooked vegetables. Saute until the gravy coats them well.
11. Add water to the kadai, mix well and cover the kadai with a lid. Cook the curry for 5 mins.
12. After 5 mins, add fresh cream, garam masala powder and kasuri methi leaves.
13. Finally garnish with finely chopped coriander leaves.
14. Kadai Vegetable Sabzi is ready to be served hot with any Indian bread or flavored rice recipe by the side.
Kadai Vegetable Sabzi is a wonderful side dish for vegetarians. It is made with stir fried vegetables and a simple gravy with a spice blend. Since there are a lot of vegetables like potatoes, carrots, cauliflowers, green peas, beans, tomatoes, capsicum etc, this curry looks colorful and appetizing. Making this recipe is very easy and it doesn't consume much time either. You can make this all in one pan and then also add other vegetables of your choice apart from the ones we have shown in the video.
