KATAIFI with almonds, walnuts & pistachios
INGREDIENTS
For the filling
450g Kataifi (you can find it in any Greek or Turkish shop.
3/4 cup/120g almonds, coarsely ground
3/4 cup/100g walnuts, coarsely ground
1/2 cup/100g pistachios, coarsely ground
3 tbsp/50g granulated sugar
1 tsp ground cinnamon
400g unsalted butter for brushing
For the syrup
2 1/2 cups granulated sugar
2 cups boiling water
1 cinnamon stick
4 cloves
1 Strip of lemon peel
1 tbsp honey
Few drops of lemon juice

I made a slight variation using cashews rather than almonds and put a layer of shredded pastry in flat tray - then the nut mixture and then another layer of shredded pastry. All else was the same. I was scared to make the individual rolls. The result was fantastic, I loved the taste and so did all my guests Thank you Stavros - Another variation was I used Australian honey which I think is the best! (sorry for the pun).

Ohhh... Kataifi.. It always reminds me of my grandfather who had come to Greece from Asia Minor after the massacre.. He made delicious desserts, kataifi was perhaps his masterpiece.
