I had to make Katsudon for Deku after seeing his reaction to letting Eri go. It was a heart breaking moment, but food makes everything better. That, and a little push from his friends. This dish is super easy to make and can be made very quickly for a nice all in one dinner.

Great video! I love making tonkatsu. Next time try making sure you don't fully cook the egg or let the stock fully evaporate(leave about 2-3 tbsp). It helps get everything out of the pan easier and coast the eggs with that awesome sauce. A little shichimi and i put sliced shiso on top. P.S. I couldn't remember if I made a cooking video for tokatsu don so I checked. Tonkatsu Don was the first video I ever made LMAO. It's long and terrible! Gotta start somewhere i guess...

Honestly this just looks like one of the most satisfying dishes you've shown us how to make on your channel. I know it was easy to make by comparison to a lot of other things but sometimes simpler stuff is just way more delicious

That's one of the better things about using pork, it's so much more budget friendly! I can usually get a couple of good sized butterfly porkchops here for less than $5

It's totally optional but the classic one usually put green onions before putting egg and garnish it with Japanese parsley. But then again it just personal taste, the one in this video already look awesome.

OMG!!! I LOVE Katsudon!!! 🤤🤤🤤 that looked legit! I make a slightly modified version. I like using the thin or breakfast chops cause that’s what I’ve dried up for years. So I know how they cook up. And I caramelize the onions and then make the stock sauce with the onions and drain off that “sauce” and add the egg to the onions and cook that with out the chop. It’s a few extra steps but I don’t like a soggy chop! 🤣 but I do pour the dashi sauce on top of the rice and then plate up like usual and top with a tonkatsu sauce on the chop. And I just realized that i sound kinda crazy! 🤣

That cayenne pepper added to your coating, stuffs a hard staple in a lot of my home cooking. It's such a simple addition that really carries its weight. If you read this Chef, what's your thought on leaving the eggs just slightly under done, think the fresh hot rice would carry enough heat to finish cooking it? Or would it cool off way too quickly? Something about the idea of that eggy goodness mixing in with the rice sounds potentially great to me.

When I saw you put on the katsu on the onion and pour down the egg, I was like, aww. Because at first I was thinking that youre going to make a soft and fluffy scrambled egg with a bit onion for aroma and taste. Therefore the katsu would still be crispy and nice while the eggs will give a nice change from something hard and crispy to something soft and fluffy. But hey, it still looks delicious! And im hungry and craving for katsu-don....

Definitely going to try that. What's your general recommendations regarding breading? I've seen you here do flour-egg-breading. I usually do egg-flour-egg-breading (for schnitzel) and used to do just egg-breading (when I was still young and naive). I've also seen egg-flour-egg-flour with no breading (e.g. for some fried chicken dishes). Does the composition of the layers have a big effect on the end product or is it just everyone doing it how they learned it with no massive differences?

It really depends on the texture you want. I almost always go flour then egg. This allows for maximum coating. If you're going for a flour batter like Karaage, then you can skip the panko and go egg then flour. Just as long as you're not dropping egg right into the fryer lol

One cookbook has a recipe for baked kastu and it is good. Love the plus ultra. I have made that 4 times this year already. I got the 10 pack chops and did them all at once. I double breaded them a few times. Ice skating is fun ^.~ there is another anime for you.. Yuri on ice. A katsudon perochki..

Replace Okonomiyaki sauce with Bulldog Katsu sauce and you got my attention. I've made a Katsudon before but I have to leave the egg topping out..my stomach..does NOT like it, in the least. Otherwise everything else is good for me though I tend to pan fry my tonkatsu in less oil since a gallon of cooking oil starts off at about..3-4 bucks on the cheapest end of the spectrum to 10+ for peanut oil. Had a katsusando for dinner just last night so there is some irony in seeing this first thing in the morning lol. Also Katsudon are a bit of a tradition for school kids in Japan as a 'good luck' sort of thing since Katsu can also mean "Win/Conquer" and it's usually eaten before big test..anything with Katsu in the title really..katsusando, tonkatsu..anything for good luck.

CHEFPK I did it, flavor is there! (Had to use fish sauce cause I couldn’t find bonito, and my pan I used has little to no non stick left so the eggs got messed up 😭) it was good though x3 I used a Korean chili sauce I saw in stores but I think I’d rather the okinamiyami sauce next time. Need to get a better pan (and a bigger bowl )

Hey chef, question re. seasoning. I've always been taught to season the meat before dredging it as, when the flour and everything's on it, it's very hard to get that seasoning going through the meat. Is seasoning the flour and crumbs enough? Or should we at the very least hit the meat with some salt before the dredging process?

I feel that I could make this. Does the pork have to be Deep fried or can it be lightly fried?

Froebel Vergara Deep fry gives you the best crunch and is quickest to cook. Frying them in a saute pan has the risk of burning them easier. Deep frying is the traditional method, but using a normal pan and just frying it in there is ok as well. :)

With a thinner cutlet, you could shallow fry it, flipping to cook both sides.

CHEF, what about using chicken in place of the pork? Should I use Thigh or Breasts? What about baking the meat instead for a slightly healthier meal, would that take away anything from the overall dish?

1:17 . Is it really worth it to season the flour for the primer layer? So little of it is going to stick to the meat. I season the meat itself, _before_ pounding it flat, hoping to embed the pepper!
