That's some serious meat fishing! Closest thing we have to that in Florida is a southern flounder.. much smaller but still good eating. What's your favorite way to prepare those things?
I fillet and then segment into 1”x3” or so pieces, beer batter and fry them in oil. has to be my favorite technique for taste, although pan seared in butter is a close second. Enjoy!
