Keep Your Nuts From Going Rancid Using This Simple Trick! Not only can rancid nuts taste bad, they can also make you sick. This slick trick helps make nuts last loinger ans taste better.
Henry and Irene have been living off grid full time since 2005 on a 43 acre off grid homestead in the high desert of Northern Arizona. Situated at 5280′ elevation, we enjoy four seasons of beautiful scenery and weather about 60 miles south of the Grand Canyon.
We grow most of our green beans, peppers, yellow beans, tomatoes, onions, cucumbers, squash, garlic, and herbs. Specialty crops like asparagus, sun chokes, and lavender are supplemented by foraged foods including wild ground cherries, prickly pear, and other native plants.
Electricity is made using solar panels and one 400W wind generator. We power our buildings in two groups: Irene's studio by itself, and house infrastructure: house, greenhouse, and workshops.

We can under vacuum because our freezer space is at a premium. If you have freezer space, most nuts freeze we’ll also. Have a great weekend. Take care.

To clean out the sticker residue, use folded papet towel and any cooking oil n just rubbing/elbow grease. I removed all theclabels/stickers on all my jars this way. The I just use the blue painter's tape to label them.

I bought both sizes of jar vacuum sealers last year. I reuse the lids as well. I use them to store my dehydrated goods. Such as wild mushrooms, onions, peppers, and chives. Good morning friend! In the old days it seems that the metal lids were thicker metal, but that could just be bad memory. The new location days we’ve bought in the last 4-5 years seemed to be easier to deform the lip. We mangled several lids using the techniques we’d used for years. That lid lifter works extremely well! Great video Irene - we are going to do our nuts with the food saver jar sealer. We learned something new today and are going to process the latest batch we bought. Got one of those things with the original food saver and had no idea what it was for.

Oh that's what I am. . .a kitchen nerd!!! My most favourite places to be are kitchen stores, spice shops and and ingredient shops. My favourite spices are Indian and Middle Eastern but I do love all spices and herbs. I have so many kitchen gadgets, nice bowls dishes etc lol. I don't know if I could ever cull my kitchen gadgets lol it would be like losing something precious to me, I kid you not and hubby would say that of me as well lol. How sad is that? lolol When dad passed 4 years ago all his Asian shape cutters came to me so if I want to press the dragon into a slice of carrot to decorate my Asian cooking I could. There are 10 different shapes and they cost him a fair amount. Will I use them?. . . . not very often but I will never get rid of them! Kitchen and dining 'stuff' is an obsession with me. Now I'm letting the cat out of the bag lol. I live in a country village 30kms from Inverell NSW. The village has just over 500 people and it is called Delungra. There is only a petrol station, a pub and a bowling club (outdoor bowls), that's it. If you want to go grocery shopping etc you have to drive to Inverell making it a 60km round trip. This will probably be our last home and we were only able to purchase it outright because of money left to me in Dad's will and the same amount going to my older sister and younger brother. I'm 65 in Dec and hubby will be 70 in Oct, so no more moving unless we win lotto *grins*. Take care, Michelle

I have that exact same lid opener. I believe I got it off of eBay get one for me and a young friend of mine got her one also. Takes the lids off so well but I actually reuse them.

We love the lid lifter. I bought it on EBay to help save kids - and jars. New caning jars seem to be less tolerant of abuse. The tool avoids pressure on jar edges which seems to be the major failure. Irene likes that the jars stay in one piece! Take care.

stickers come off easiest for me with a little oil on it. Wipe some oil on it and let it sit for a few minutes.

Instead of stickers on jars, you can use a black permanent marker - and wash it off with 91% alcohol when you want to erase it for re-use. 😄

@@ML-rd6ci thanks for asking. C. Botulinum can be a pretty scary thing! Generally speaking, nuts that have been commercially dried and packaged have a level of moisture that makes them safe of vacuum can. (Check the vacuum sealed raw nuts at your grocery store). Our motto when canning “when in doubt, chicken out.” The science for canning relies on some pretty involved math. It’s safest to follow tested recipes like from the Ball Blue Book. We only vacuum can our nuts because we buy in quantity and can’t eat them fast enough to avoid spoilage, and we have limited freezer space. Take care.

I have a Cabelas vacuum sealer and have wondered for a long time if the lid sealer would work with it. The lid sealer is too expensive to purchase on a chance, and I've never found anyone who has tried it with the Cabelas. So for now, I use plastic bags to vacuum seal. When we purchase bulk nuts I vacuum seal and freeze those I won't use immediately. I've looked for the canning lid opener you have, and have only found one on etsy, which once the shipping costs are added is over $70 Canadian, too pricey for us. For now I use the handle end of a teaspoon to pry the lids open, and they aren't usually damaged. I store my empty jars with the rings on, so the rims will not get chipped when they are being moved around.

I was hoping that you could explain how to prepare my stale nuts .. I am 57 i love my nuts but when my nuts are stale I found if you bake your nuts at 350 with a bit of sprayed olive oil and salt ( since my nuts aren’t salted) and then I have fresh nuts again .. I love my nuts

We normally go to Costco to get meat in bulk. Sometimes I’m happy with the cut and sometimes I’m not. Maybe I should try the Sams club.

We have one of each big box stores within 60 miles. Unfortunately they are in two different directions. We've bought at both stores for 16 years. The quality comes and goes, but right now we've found that Sams seems to have better shelf life and a generally higher quality cut. It all depends on where you live We don't advocate for any big box store in particular and can't say thyat one or the other wouod be better where you live. Let us know what your experience is if you try another big box store!

Long term storage for us is perhaps up to 2 years, we’ve misplaced a few jars that long but usually eat them in less than a year. If we were looking for more, we’d use oxygen absorbers. Thanks for asking. Take care.

I have 6#'s of walnuts in the fridg to seal, should I lay them on a cookie sheet to make sure no moisture from the fridg. Thank you so much. My wide mouth vacuum sealer would not work and I watched a you tube video and the lady said to take a lid and put it in the sealer upside down and then it worked.

What about storing nuts in mylar bags without an oxygen absorber because of the fat in the nuts?

You could store nuts in mylar bags with no problem. We don't have a pro bagger for mylar, but you might need to control how much the bags get sucked down to avoid crushing/breaking the nut meats. Take care.

Anaerobic conditions can cause botulism. What do you do to prevent this? Moisture absorbers?

Great question! We rely in maintaining water activity below 0.85 - which just means that the commercial nuts need to be dry as they come from the packager. Vacuum packaging, or canning as we described, creates a low r no-oxygen environment. The canned nuts are stored at room temperature, which means we have to control all microbial growth by other factors such as water activity. Take care

Thanks for asking. We've found that the process that we use without absorbers will keep nuts fresh for more than a year (we've "discovered" a jar or two that got hidden for more than a year) that were still fresh. Generally we eat nuts in less than six months even when we vacuum seal several pounds at one time. Take care.

Thanks for your comment. Botulinum is controlled by a variety of factors. Water activation is a key factor in determining shelf stability of non-canned foods. In general, preserving any vegetable in oil has a risk of botulinum growth. That’s because the vegetables have too much water er in them. Generally, nuts are below the critical point for normal non-canned preservation. We recommend following the Ball Blue Book or other scientific-based authority when preserving food. Take care.

Hi! We regularly have nuts on the shelf for a year stored in sanitized jars with the vacuum from a vacuum sealer. We’ve accidentally found a two year old jar we missed in the pantry and they were completely fresh tasting. The nuts could have an oxygen scavenger packet out in the jar to further extend shelf life. If you mean to pressure can nuts, be aware that this will cook the nuts. Thanks for asking.

We’ve found good quality nuts stored here n vacuumed jars last very well. We usually use nuts in six months or less, but have accidentally left some for two months with some flavor loss. We would use oxygen absorbers for longer periods. Take care.
