Not enough qualified failures on food RU-vid. Thanks for putting this up. It can get a bit exhausting to see the highly polished perfection of shows that're ostensibly meant to be teaching me the decidedly unpolished art of homecooking. This entire series from Kenji has been thoroughly entertaining, and instructive. Also, gosh, I really would like to see other YT chefs pull stuff off in one take more often. I think we'd see some excitingly human results.

I do think there is a reason why people do it that way. When someone's making a video, they want you to make the recipe, so saying "if you do it this way, it'll work! See, it works!" does make sense, as opposed to "if you do it this way, it still might not work". That being said, it always irks me when people put up recipes that don't work, or where they clearly did some sneaky swap in the aim of producing a nice video over producing a good recipe. I think the real desirable quantity is just honesty, rather than failure.

@@Jodabomb24 I recognise the use-case for highly produced videos that present a streamlined recipe. I would rather, however, have more recipes include the mistakes (perhaps as appendices at the end to preserve the streamlined nature of the recipe itself) so that we have a clearer understanding of the success\fail states for each stage, and information on how to rectify. Apart from addressing the problem of disingenuity you mention, I think would make recipe videos more effectively didactic.

The search for genuine entertainment/interaction is omnipresent. The debate between superficial perfection or meaningful imperfection is intrinsically part of ones philosophical beliefs. I personally believe it's easier to learn from mistakes that help me understand the nature of what I'm doing, opposed to mirroring a perfect product.

I'm always so hard on myself when I make mistakes (in the kitchen or otherwise). It's great to see a pro take a mistake in stride and work with it. I'll try to remember this moving forward.

thats half the fun of cooking. as long as you still enjoy shoveling whatever you made into your mouth, you succeeded. youre not presenting your food to a critic, youre not being paid for the dish and no one is going to complain to you about it. if it tastes good, the mistake doesnt so much matter. recognize what didnt go right and then fix it for the next time you make it. eventually, you will have a dish that you perfected on your own and it will look as good as it tastes. as seen in this video, EVERYONE makes mistakes in the kitchen and always will.

So true man. I tried my hand at my first no-knead bread, well my first bread ever. And the dough just fell through the rack onto the oven door. I was so furious I threw it away even though it was in one piece and I could have salvaged it. If only this video was uploaded a day before.. :(

personally i hate the burnt flour taste i get from the hot stone with my uuni. i just set the ego aside, build it on a parchment round, launch it and pluck the parchment out after a few seconds when the crust has a chance to set

Kenji, you being honest with mistakes and making the best of it is so important to see from some who "technically a professional" like you. I think every profession could be improved by seeing their professionals be honest about mistakes instead of pretending like they're too good to make them.

Thank you for still posting this. I am so, so hard on myself when I screw up dinner for my family like this. So it's so reassuring to see even, how did you describe yourself "professionals, because I guess that's what I am", make mistakes. It makes me feel like I can continue to screw up and still improve as I do and cut myself some slack.

I worked in a pizza restaurant for close to four years, Kenji, let me summarize all of my mistakes and learned knowledge about stretching dough into one paragraph. The key is to build on the wooden peel and use your fingers to press into the center of the dough to expel the trapped air that ultimately caused your pizza to be a little bubbly. Observe consistent thickness throughout the base of the dough utilizing the same use of the fingers technique then form a 1/2" crust. If you need to lift it to stretch use the back of your hands to avoid tearing but for how proofed your dough was I wouldn't have recommend it. Ultimately rotate it with the metal peel, and move it to another spot in the oven while, if you're concerned, sweep out your oven of excess cornmeal/flour to avoid any burning cornmeal/flour taste and then place back on hotspot. There are alot of ways to stretch a pizza dough but my favorite is still tossing it. I cook alot of your recipes and I really appreciate the way that you prep things out like a true cook, I could see pushing elbows with you.

The issue here with the hole was mainly overproofing. The dough transfer method is pretty standard, though I often also use a wooden peel. The reason I didn’t here was because when you build directly on a peel, you need to work fast or it’ll stick (At least with a high hydration dough like this), and I was worried because I know I work much slower when I’m shooting and talking. Ironically that because the problem itself!

Also, I will be looking forward to that rework, and all of your concerns are definitely valid pizza concerns lol. Pizza dough is alive, sometimes it's our friend and sometimes it's not. This series is my favorite in all of youtube. I have never learned so much while being so entertained. It's just pure fun to watch. I can only hope that Kenji keeps up the series for as long as possible. I love Kenji's book, but these videos bring a dimension of reality and relatability to the wealth of knowledge in the book. Kenji, you truly are a hero to us home cooks. Thanks for applying the scientific method to cooking. Thanks for sharing all of your discoveries with us. And most of all, thanks for keeping it all so so real. I have messed up more than a pizza in the past, sometimes worse than the one in the video. But now, next time I mangle up a pie I can just think back to this episode, and be sure that pizza is still pizza, however imperfect :). Cleaning up my pizza steel and home oven is still a pain though haha.

Now I feel excellent about my home made pizza from last week that had a hole in it from a dough low spot. The pepperoni grease pooled and ripped a hole. But still tasted GREAT! Thanks for the honest post dude

When you first transferred it to the peel and stretched it out I honestly had huge doubts if that thing was going to come out looking remotely like a pizza. As soon as I seen it come out of the oven my mouth salivated and honestly i thought it looked fantastic! I immediately felt ashamed to have doubted your godly skills!

Love the fact that mistakes were made and you aren't ashamed to show them. If amazing chefs like you make mistakes, then so do home cooks. So this shows anyone scared of cooking because of failures that we are all human and will make mistakes from time to time.

THAT was nothing short of inspirational; thank you. I'd never heard that explanation of the 'microscopic kneading' of no-knead fermentation -- made so much sense. IMO the end result actually looked really cool.

trying to move around a pizza after it's been topped is a nightmare for me. with your cast iron method, I've been topping the pizza right in the hot pan. Sure the crust gets maybe a minute of heat before it goes in the oven, but that's hardly a bad thing.

Damn it, chef. So, this time, the measurements were basically perfect and you followed form and all was looking too good to be true... Then that MESS...which still looked beyond incredible, delicious, and perfect, if I don't say so myself. Yeah, a real shame, not sure why the dough was so ready to tear there, but a brilliant and expected recovery as always--true to form! Thank you for posting such a thing--it gives us amateurs all the confidence in the world to tackle what might be daunting projects (such as homemade pizza!).

Any food made with sincerity and love is always delicious no matter how ugly it looks to your eyes. Thank you for showing us the imperfect pizza, now I won't ever be disappointment at myself for making my food look ugly. As long as its delicious, its good.

Hey Kenji. I've learned a lot from you. Thanks for all the great lessons. I had lots of failed transfers early on in my pizza making between topping and peel. After shaping the dough, try putting the dough on the peel BEFORE topping it. Reduced my misshapen (but still delicious) pizzas significantly.

Sometimes, things go wrong. The important part is how you respond to the situation. Kenji did a great job of not letting the little things get in way of a tasty pizza.

I winced when I saw the pizza disaster.... but still SALIVATED at the end result!!! And that’s a beautiful message to send to kids..., part of our charm comes from imperfections and flaws... and even when a pizza is “ruined,” it’s still perfect... because it’s pizza!! This is most def one of my favorite episodes. You don’t ever have to reshoot it, trust me

After many similar disasters trying to get the pizza onto the peel for the oven, I've gone to using parchment to start the cooking. Once the pizza has cooked a few minutes, I pull off the parchment and continue. No anxiety with it being misshaped, or tearing when moving it around in the oven. Great video, maybe it should be called, "The Zen of Pizza Making!"

this is so great because this was literally me my first 2-3 ooni pizzas, the best story is my cousin had pizza making night with his family and they all made 4 pizzas on the counter and then realized they had no way to put them in the oven, I've been there also and have improvised with cardboard boxes

I use Kenji's pizza dough recipe from SE years ago. Still great. I only have a regular oven and steel plate but I gave up on trying to move the pizza into the oven.. Many fails just as Kenji did,,, I now use a parchment on a cookie sheet and slide the pie and parchment into the oven, then after 2 minutes or so, remove the parchment with a peal and carefully your hand. Works great for me.

Ha, I did basically the same thing a few wks ago. Couldn't transfer it from the peel into the oven at all. Cut it into quarters and rolled the edges of each a bit. Ended up looking like some sort of crazy Italian street food & tasted great.

Glad it's not only me experiencing transfer or launch failure. BTW, before each baking session I flip the stone over so the burnt side is facing down...the previously burnt side is now squeaky clean from having spent a whole session face down at 900F.

Thanks for making these videos, I find that a complete record of the whole process is the best way for me to learn how it's done. I had made a half-dozen pizzas of varying edibility (knowing almost nothing about breadmaking in general) until I came across the idea of a no-knead dough, and then learned how to do it myself from your channel. A week later I'm confident that I can cook a no-knead pan pizza and it'll be good, rather than an "educational experience".

Sprinkle polenta or flour on big sheet of parchment paper and stretch pizza dough on that & build pizza. Pick up with pizza peel and slide onto pizza stone. After it bakes a few minutes just pull the paper out & finish baking. No more mangled pizzas & can move the pizza easily.

Kenji I've been a loyal lurker of yours for several years and you have always been my go-to recipe guy, I pretty much almost never post on RU-vid, but i just wanted to say don't ever stop doing what you do, I think everyone should always strive to learn more under any circumstance and push forward, I think this video has many more lessons to teach outside of building a pizza, you really are a hero in many respects

I made this dough and am now laying in bed. I have never made a pizza that hasn’t looked mangled, no matter how much I’ve spent/done research on peels, stones, special flour.. I have to say Kenji is so right when he says no matter what it looks like, it will still be delicious.
