In the UK this is simply called cauliflower cheese and it’s a standard and popular dish. Generally served as a side with a roast dinner. There’s no association with it being a substitute for macaroni, which we rarely eat
I'm from Texas, and this is how my mom usually served cauliflower and also broccoli when I was growing up. I don't make it very often, but it sounds really good after watching this video!

You don’t need any flour. I make it with some cream cheese, heavy cream and sharp cheddar, and I add hot sauce or what ever spices you want. Skip flours, it’s extra carbs,
Looks so good. Love the combo of cheeses. I do think if you want to call it 'mac and cheese', the florets need to be cut down into smaller more uniform sizes. I've done this type of recipe for years and it just makes a difference. Plus it takes that cauliflower look away for those who think they hate cauliflower! Thanks for posting!

Looking forward to making this. One thing on arrow root, if you use too much, it can make the consistency kinda slimy/stringy, just be careful with that.

I tried Keto once before about a year ago, and I think I focused too much on Keto desserts and/or special recipes like complicated pizza and pasta doughs, etc. It all just became too expensive to keep up with it, especially since I'm in Canada and a lot of the required ingredients (ie. Allulose) are only available in the US. This time I'm going to go more the 'meats and vegetables' route, and the occasional one-serving dessert treat (using the recipes I bookmarked from your site). I have to say, though, I don't understand this aversion to cauliflower I hear so much about. My whole family LOVES cauliflower! LoL Even though I'm the only one on Keto!
For anyone wondering if you can use frozen cauliflower, yes just cook it following the package directions and drain it well. It was delicious! I thought it was a touch salty so I will reduce the salt next time.

I need to give you my very easy French recipe for cauliflower: cook the flowers on steam, al dente, pour it into a big bowl, crash it a little beat with a fork, in another bowl mix 250 or more of sour cream with a cup of fresh grated parmesan plus a pinch of salt, pour this on the cauliflower, gently mix it, pour in a backing dish and put it on the oven (180 degree) for 20 minutes. Very simple, easy and tasty. In France we traditionally make it with a béchamel gravy and sometime put eggs boiled cut in two in this gratin, I make it to with my recipe and then it's a complet meal. We are too lazy to eat cauliflower with real cheese but this looks so good. I might have to use real cheese next time. She made some yesterday. Its so good. She made two cauliflowers and added the nacho cheese to it.
I know this is got to taste really good! I like cauliflower a lot. I was wondering why the cheese sauce looked kind of pinkish. Maybe it’s due to the almond flour. Anyhow thanks for posting this keto recipe. It looks delicious.
I can make this alongside my regular baked Mac and cheese that I make for my sons with diced butcher ham off the shanks. Similar recipes except keto flours/thickeners. I agree the florets need to be smaller.
Thanks for this. I was looking for a Keto Cheese Sauce recipe, to use with a variety of cooked Veg and also for Sunday Morning Eggs Benny replacement. Awesome. Luckily, I Love most vegetables, including Cauli, and made properly, Cauli mash is so close to mashed potatoes (unless you REALLY hate Cauli ).

Mac & cheese is one of my husband's favorite foods ever, & he loves it in pretty much any form. Can you bake this like baked mac and cheese. No bread crumbs just some pork grind crumbs on top. Or does the cauliflower burn? I'm not sure, I haven't made this before but looks promising!
That cheese sauce looks great. I want to make it and keep it in fridge/freezer to pour over cauliflower,broccoli, keto noodles, and just about anything else. Hummm 🤔 maybe even a little drizzle over a steak.

I was thinking the same think (less the Sriracha). If you put it in an Oven Safe dish, sprinkled on some bacon, green onion and a little more grated cheese and popped it under the broiler for 2 or 3 minutes. Yum.
I don’t like the taste of cooked cauliflower, however I might try “cooking” smaller pieces (more macaroni-sized) either in the frying pan or oven to get the water out of it, which seems to take most of the cauliflower taste out of it…then add the cheese to it and stick it in the oven to get that crust on it. I’ve never tried pre-cooking it in the oven before, but the frying pan works well for cauliflower rice…
I've read to add slice of lemon to cauliflower while steaming to tone the taste down even more for recipes. I will try that next time. I love cauliflower, anyway.

I am new at Keto so I wonder what the macros are in this recipe and another thing that confuses me are serving sizes. If the recipe is not written example 2 cups = 1 serving then I'm lost 🙄

I want to say to those who say cauliflower is gross-grow up 😂 unless you're a 4 year old I don't get it haha, most of kids like cauliflower anyways...just kidding but really, all food and veg is good, it's just about finding the right way to make it ☺️
@@KetoFocus that’s about all the meat I get. Not casserole but I make crockpot stew with leftover pork chicken or ground beef. I add onions cabbage mushrooms zucchini etc. I just know not much meat in it. I used to really like pork chops but now they’re all so dry. No fat on them.

Not trolling here but this is not a sub for Mac and cheese...it is just cauliflower cheese...and if grilled then it's a gratin. There is zero macaroni in it which is a pasta. We don't need to 'trick' our brains into believing that is is pasta when it clearly isn't. It is a great and classic dish as is! Perhaps I am being keto grumpy but I am so tired of fake and trendy names for basic things...
Use keto macaroni noodles instead of cauliflower. Many don’t want to use those because they have gluten in them so cauliflower is the way to go. It’s the same thing as cauliflower cheese, which is a traditional British dish and therefore many in the UK call it that. On the keto diet, we have referred to it as cauliflower Mac and cheese for a decade to signal to those on a keto diet that it is a keto friendly substitute for Mac and cheese.
