I had to make a video for my favorite scones, I use to eat these like crazy at my first pastry job! Of course those were doused in a super sweet, corn syrup and sugar filled icing. These delicious babies have total carbs kind of high from natural sugars in the orange juice and cranberries but if you count net carbs they are only 3 grams which is way better than one recipe I found had 45 grams of net carbs. I used the base of my buttermilk biscuit recipe for these scones so they are more like a soft fluffy scone, rather than a hard, drier scone you may be thinking of that you have to dip in tea or coffee. #coconutflour #nutfree

Keto/Low Carb Cranberry Orange Scone Ingredients
40g/1/4 Cup + 1 1/2 Tbs. Coconut Flour
80 g/5 1/2 Tbs. Unflavored Whey Protein Isolate
2 tsp. Xanthan Gum
60g/1/2 Cup Powdered Sweetener
1 Tbs. Baking Powder
1 tsp. Baking Soda
24 g/4-5 Tbs. Oat Fiber
1/2 tsp. Salt (1 tsp. if using unsalted butter)
113g/4 oz./8 Tbs. Salted Butter (cubed or grated and cold)
Juice and half the zest of one orange + Alternative low carb milk of choice to equal 4 oz./1/2 Cup of liquid
2 Egg (room temp. is best)
4 Oz./1/2 Cup Cream Cheese (softened)
4 oz. Cranberries (fresh or frozen)
Keto Orange Icing:
90 g/3/4 Cup Powdered Sweetener
1/2 of an Orange Zested
1/4 tsp. Orange Extract
2-4 Tbs. Alternative milk or juice or combination of both to achieve the right consistency

I am making these TODAY 😋 BTW I've meant to mention to you that we hate coconut and are not fond of the flavor of coconut flour so I use 1/2 coconut & 1/2 lupin flour in all your recipes. The end taste is more like regular wheat flour pastries. 😉 so grateful for all your hard work. It makes it possible for us to adhere to a healthy lifestyle 💞

@KetoUpgrade it's much more the texture and behaves in baking more like coconut flour. I make a lot of your recipes and I haven't had any issues. I'm in the pacific northwest, so baker to baker, we always have higher humidity, and it's always cool, so lupin may be a bit more drying for baking inland.

You can make your own keto craisins, there are directions all over the internet. The ones from the store are loaded with sugars and preservatives and the reduced sugar ones are just as bad READ THE INGREDIENT LABEL. Need these things to come back in season!

New to your channel stoked to find keto scones, I’ve struggled to make a scone at least similar to Seattle Fisher Scone mix of my childhood💕 I’m in Idaho so It’ll be huckleberry WC Cho swap out. I would love to see a Keto PAVLOVA or Eton Mess….😬

Hello I’m so happy wish I could send you a picture my cranberry orange scones are a bomb. You really know your stuff. I didn’t have fine sugar so when I mix everything for the frosting I put it in the bullet it came out with a nice yellow colour. Taste fantastic my nephew who’s not Keto had three and wanted more. I am a senior so when you explaining could you go a little bit slower . Thanks how are the baby doing enjoy every moment with him they grow up so fast thanks again

I tried it in my cupcakes, they needed to cook longer but they were ok. I hate the flavor of plant based protein though at least the one I grabbed.

Will whey protein concentrate work as well as whey protein isolate in these? I usually use an organic grass fed whey concentrate, which is obviously less processed and refined as the isolate. It is still fairly low carb, but not sure how it would behave in a recipe like this one.

Should work fine! Just do as I do, as the powder may be more or less absorbent, so just add liquid a little at a time to ensure they will come out right and be the easiest to work with.

I used the largest scoop I had. And they are cheap I don't even think they are numbered like they are suppose to be.

@@KetoUpgrade do they spread out much? I have a jumbo scoop that is about 1/2 c capacity and I think it’s a number 8. The number 12 is 1/3 cup. It’s not a big deal, I just refigure the macros based on the number of scones I end up with.

She’s super busy with my four adorable grandkids, so I surprise her by ketofying her favorite treats whenever I have time. I’m usually pretty successful, but your channel has helped me up my game considerably, especially because I’m allergic to almonds and the endless parade of keto treat recipes that are mainly almond flour by bulk is pretty disheartening sometimes. I’ve used whey, psyllium, ground flax, coconut flour, etc. to make alternate flour options, but oat fiber is totally new to me, and a great option to mix with these others.
