Hi friends, today we go over making another traditional Persian dish called "Khoresht-e Karafs" (خورشت کرفس ) ((also spelled as khoresh karafs)) which is "Persian Celery Stew".
I make it with lamb in this video, which is how it's usually prepared in Iran, but often, we cook it using beef at home.
This is a rather easy dish to prepare, but it does take some time to cook. The stew is placed atop Basmati (Long Grain) rice when served.
To learn how to prepare the rice, please check this video, which also shows you how to make Tahdig:

Thank you guys for watching, I really do appreciate the support and all your lovely comments.
See you soon.

I’m Mexican, I’m learning to make Iranian food for my husband. I’m so grateful that this RU-vid channel is not in Farsi, so I can understand it 😁

Very nice recipe. I knew this stew before and made it many times. However, I followed this instruction since there is some tweaks which I liked. And it turned out really nice! . A real upgrade to something that I already had liked before. Thank you!

Nice Job Yousef. I always need a refresher while cooking to see if there are any little touches or changes people add. Zafran and the hot pepper was a good touch. Thanks

Make sure to remove the stringy part of celery by pulling from the top joint down otherwise when you bite you end up struggling with them in your mouth. It makes celery more palatable. I personally would cut celery only two finger width than this gentleman has shown, easier to chew and swallow. It's a gorgeous tasting recipe with enough fiber for those who need it.

Hi, can i have a question, why we have to add salt later when meat almost done, why we can not add salt at the beginning? Thank you
@CookingWithYousef
@CookingWithYousef 3 года назад
You can….it helps me control the flavor better when I add it later
@NanaBearx2
@NanaBearx2 2 года назад
Salt pulls the juices out of the meat causing it to become dry...adding salt towards the end of the cooking when the meat is basically done...adds the flavor without depriving the meat of its natural juices

why dried herbs instead of fresh?
@CookingWithYousef
@CookingWithYousef 3 года назад
with this food, using some of the fresh herbs instead of the dried ones might make the flavor bitter.
