Kinder Bueno cake recipe.
INGREDIENTS
============
COCOA TOP Ø 20 cm

- 5 eggs
- 105 g sugar
- 30 g cocoa
- 4 g baking powder
- a pinch of salt
- 75 g flour
- 15ml vegetable oil
- 15g cornstarch
🔥 180°C

WALNUT CAKE SHEETS Ø 20 cm

- 4 egg whites
- a pinch of salt
- 80 g of sugar
- 80 g ground walnut
- 32 g flour
🔥 180°C
⏰ 15 minutes
CREAM
-------------
- 400 ml milk
- 60 g cornstarch
- 4 egg yolks
- 160 g sugar
- 120 g butter at room temperature
- 60 g chopped forest hazelnuts
- 150 g milk chocolate
SYRUP
-----------
- 100 g burnt sugar
- 100 ml water
- rum essence

CHOCOLATE DRIP
-----------------------------
- 50 g dark chocolate
- 50 g of cream for the hot cream
METHOD OF PREPARATION

COCOA TOP

Separate the whites from the yolks.
Mix the egg whites with a pinch of salt.
Add the sugar.
Mix until you get a hard foam.
Add the oil to the egg yolks as in mayonnaise.
Add the yolks on top of the whites.
Sift the flour, starch, and baking powder over it.
Sieve the cocoa.
Mix with a spatula with wide movements from top to bottom.
Put the obtained composition in a tray with a diameter of 20 cm.
Put in the oven at 180°C for 30 minutes or until it passes the toothpick test.
Let it cool completely, then cut it into 3.
WALNUT CAKE SHEETS

Mix the egg whites with a pinch of salt.
Add the sugar.
Mix until you get a hard foam.
Mix the walnut with the flour, then incorporate it with a spatula with wide movements from top to bottom.
Put the composition in two 20 cm diameter trays.
Put in the oven at 180°C for 15 minutes.
CREAM
-------------
Add the cornstarch and 30 ml of cold milk over the yolks.
Mix well with a whisk.
You put the remaining 370 ml of milk in a pot on medium heat.
Add the sugar.
Add the milk to the boiling point.
Add the yolk mixture and mix continuously until it thickens like a pudding.
Divide the cream into two equal bowls.
In a bowl, add the chocolate, mix well, then add 50 g of butter at room temperature.
In the second bowl, add 70 g of butter at room temperature and mix well.
Let the creams reach room temperature.
Then mix each cream for 1 minute.
Divide each cream into two.
CHOCOLATE DRIP

Put the hot whipped cream on top of the dark chocolate.
Wait a minute.
Mix well with a whisk.
ASSEMBLY
-------------------
Place the first layer of cocoa on a cake plate.
Syrup it well.
Place an adjustable ring and acetate foil.
Add the first part of the chocolate cream.
Add 30 g of chopped hazelnuts.
Place a sheet of walnut, then the first part of the vanilla cream.
Place the second layer of cocoa, and syrup it well.
Next comes the second part of the vanilla cream, followed by a walnut sheet.
Put the second part of the chocolate cream, 30 g of chopped hazelnuts on top, and the last layer of cocoa.
Syrup it well.
Put the cake in the fridge overnight.
The next day, remove the adjustable ring and the acetate foil.
Coat the cake in the cream mentioned above.
Decorate with dark chocolate drip and cream hazelnuts.
