They say that in Azerbaijani cuisine there are more than 80 types of pilafs, but only one has the royal name of "Shah Pilaf." It is cooked and served for the most honourable and dear guests. Like a Shah ruling the state, this pilaf reigns over all the dishes of any festive table.

Shah Pilaf is the true pride of Azerbaijani cuisine. Each region of Azerbaijan has its own unique recipe of pilaf. But what unites all the recipes? Of course, it is the presence of fluffy rise, accompanied by meat, dried fruits, etc. But the main feature of Shah pilaf is a crispy crust of a very tasty thin flatbread, aka ¨lavash¨, in which the pilaf is wrapped and cooked.
Ingredients:
Rice - 500 g;
Chicken fillet - 700 g;
Onion - 300 g;
Dried fruits (raisins, dried apricots, dates, prunes) - 100 g each;
Boiled chestnuts - 200 g;
Turmeric - 1 tsp;
Vegetable oil - 4 tbsp;
Saffron - 3 g;
Butter - 50 g;
Salt, pepper to taste;
Flatbreads (tortillas, lavash) - 7 pieces.
