always my fave 😍😍😍 here in our province we wash the fish with what we call TABON-TABON. then in the vinegar mixture you can also add SLICED HILAW NA MANGGA, some CUCUMBER and also DAYAP💗🥰

Very nice technique, kasi pag nababad ng husto yung fish meat sa suka nakaka overwhelm yung vinegar taste, mas okay ganyan para yung flavor nung fish nandon parin.

Hi Chef JP, nice video. Thanks for featuring one of my favorite dishes. FYI, in the Visayas region, Kinilaw is prepared with coconut milk in addition to vinegar. My mom makes a really tasty version and I filmed it for posterity, as I’m not much of a cook 😂. There’s also a nice book all about Kinilaw by Doreen Fernandez and Edilberto Alegre.

Can any fish or seafood be in a kinilaw? Is it weird if I substitute honey instead of sugar? I've had it. No sugar just vinegar and heaps of chilli. The fish was Tambakol.
I never tasted a kinilaw with garlic, sugar, or pepper. Never in my life. Even hotels in Mindanao don't use that for Kinilaw. Not even sugar. Use tuba fresh from Coconuts with or without tungog. If Fish is fresh, use veniger, onion, ginger and Sili. This is insanely not the Kinilaw you can taste in Mindanao Philippines. I will still have to find out if other islands have garlic, pepper, or sugar to adjust taste.
Kinilaw: my all time favorite. Yummy. I say kinilaw is better than sushi. Edit: I'm making a comparison of food that uses raw fish and I always find sushi bland and overrated and kinilaw as the bomb.
I love sushi and kinilaw. If you find sushi bland mist japanese doesn't like salty foods unlike mga Pinoy kaya nag kakasakit. 😆 Sa kinilaw it depends sa timpla. Regional as they say.
@@bluemarshall6180 I agree about regional preferences. I'm from Bacolod so I love Chef's recipe. I was introduced to kinilaw using coconut milk when I lived in Cebu. As for sushi, I can eat a few but it never gave me the craving like I would have with kinilaw. Sushi is lackluster sa flavor compared to kinilaw. That's why I call it overated.
