The idea that you have to put vinegar in the water for the poached eggs is an old wives tale. Many tests have been done and eggs poached without vinegar all turn out to be better and less messy.
You don't need vinegar for your poached eggs lad, salt the water and bring the boil, eggs at room temp already cracked into the thin rimmed bowl and slide into the boiling water turning off the heat and covering as you do so. Give it 3 mins and you are done. Kippers looked great, i have also had them poached in milk recently and that was nice. Cheers Moose.
I never use citrus with smoked fish. I think it defies the purpose of smoking. Those kippers looked painted smoke rather than actual?. Nice dish nevertheless. I love kippers gentle poached in whole cream milk and let to rest whilst you poach a nice large egg in the same liquid. Yummy, served with buttered white bread.
