Kiwi Sugar in F1 | GT's Trilogy Recipe Revealed

In this video, I experiment with brewing kombucha using sugar from kiwi juice in the primary fermentation. With using fruit in F1, there is a higher chance for mold, so I share some suggestions on how to avoid this. I also add in the other ingredients to replicate GT's Trilogy Kombucha - one of my all-time favorites.

Why does GT take 30 days to do first ferment? How warm was your F1?

i think it takes longer for the yeast to eat the kiwi sugars vs pure sugar.

Can you share how many kiwis and how much of the other fruits/ginger etc that you used for this portion?

I think I did ~5 kiwi in F1 then in F2 a cup of raspberry, small ginger branch and juice from half a lemon.

Understand that F1 with fruits can cause mold. Can we use other fruits other than kiwi for F1 will a similar way that you are doing here?

Yup! I have another video where I used pineapple. I’m sure other fruits would work as well. Some of the risk from mold comes from the fruit/sugars floating at the top exposed to oxygen. It is probably better to use 100% juice vs cut fruit but either can work.

@@kombuchakev8052 thank you so much for your prompt your reply!! what about fruit waste such as fruit peels? Apologies for asking so much, just looking into possibilities to create scooby with fruit waste that can be use as source of sugar

@@audrianawiz4788 possibly! There has to be some sugar in there. Might be hard for the kombucha to break down/consume the sugars in peels. Worth a try though, let me know if you have good results!

@@pinky6390 you could! It would flavor similarly. But since they use kiwi in F1 wanted to give it a try!

Yes, juice is from the 5 I cut up. I decided to include the pulps too to get a little extra though.
