Kolacky Cookies

These cookies are a holiday favorite. We got this recipe from a friend of our grandmothers who would make these cookies for Easter. We also like to make them around Christmas time since they are loved so much.
Hungarian Kolacky Cookies
(Makes about 36 cookies)
Ingredients
8 oz of cream cheese, softened at room temperature
1 cup butter softened at room temperature
½ cup granulated' sugar
½ tsp vanilla
2 cups all-purpose flour
1 (12.5 ounce) can filling like apricot, prune, raspberry or nut
Optional - powdered sugar for dusting
Directions
Preheat the oven to 350°
In the bowl of a stand mixer, add the cream cheese, butter, sugar and vanilla and mix well
Add the flour ½ cup at a time and beat until well combined. The dough will be soft and sticky.
Wrap the dough in plastic film and chill for at least 4 hours or preferably overnight.
Roll out the dough about ⅛ inch thick.
Cut the dough into 2½ inch squares.
Place 2 tsp of the filling in the center of the dough square then then fold the opposite corners of each square into the middle to encase the filling, pinching the dough together in the center.
Place the cookies on a tray covered with parchment paper.
Bake for 10-15 minutes until slightly browned
Allow to cool and dust with powdered sugar if desired.

I made the cookies, I used blackberry pie filling. They are delicious. They came out on the softer side. Is that how they should be? Thank you again for this wonderful recipe.

It should be a very thick jam otherwise a lot will run out of the cookie.
