I have seen over hundred videos in RU-vid and made them, including Bongeats( with all due respect, they are usually crisp with their recipe) . This recipe here is very close to the biriyani we eat in Kolkata. Thanks a lot, being in Mumbai very few restaurants serve our biriyani, this here is very very close.

Tried out today and it came out pretty well although i miscalculated the amount of stock so it was a little soggy but taste was fantastic. will try again next time with the corrections.

Came back only to let you know how amazingly perfect this recipe is. Have been following Bongeats's recipe and always got nice results but this turned out extraordinary. Ami etaa follow korey teen bar baniyechhi ebong the last time was one of the best biryani I have ever had. I have only improvised a small thing. I made a very (very) paatla juice of aada roshun bata, jol diye. Boiled the potatoes (I prefer to keep them whole) in water, aforementioned juice, salt, red chilli powder, bm1 and bm2. And added 150ml of this later while adding the mutton in the pressure cooker. This resulted in a superior yakhni. :) Please keep up the great work. ❤

Blindly follow korlam...so far best biriyani banalam.. age eto bhalo hoto na... it is all about process. final product eto bhalo holo ki bolbo.. Ami essence ta 70% diechi than the original amount. Milk 70% diechi.. aar oil eto dile ghee dewar jaiga thakche na.. for home oil can be reduced... rest all same follow korlam.. ফাটাফাটি হলো অনেক thank you didi 😊😊😊

Apni jodi Wagha Royal rice ta peye jan, tahole recipe te ami je time suggest korechi, seta match kore jabe. Ekta simple rule holo, biryani rice ektu sokto (80% cooked) thakte thakte cook kora bandho korte hoy, ar immediately fan jhoriye layering korte hoy. Chicken stock ta apni 300 ml use korben. Chicken ta apni marinate kore ranna korben. Pressure cook korben na, kora tei ranna korben. Chicken koshanor por, alpo jol use korben, ja theke apnar 300 ml stock toiri hobey. Ghee ta apni 90-100 gram use korben. Shree ghee holey khub valo hoy, shree ghee tei biryanir proper taste ashey . Chicken ta apni 1.25 - 1.5 Kg neben, piece gulo 100 - 150 gram sizer cutben. Leg pieces neben, breast piece biryanir janno valo noy. Ar ekta kotha bolbo, bhoyer kono karon nei, prothom bar jodi kichu vul hoy, porer bar nischoi thik hobe.
