Kolkata biryani recipe: Kolkatans are truly passionate about their mutton biryani. Kolkata has its distinct style of biryani which is on a par with the best biryanis in India-including Lucknow-style biryani and the Hyderabadi biryani. Kolkata biryani, in spite of the usage of a staggering number of spices, is not spicy. It is subtle and fragrant without being dry. A good Kolkata biryani should be moist and can be eaten on its own-no raita or salan required. This style of biryani is descended from the Lucknow style biryani that came to Calcutta with the exiled Nawab of Awadh, Wajid Ali Shah (remember Satyajit Ray's "Satranj Ke Khilari"?). What started with just a handful of restaurants such as Royal India Hotel, Shiraz, and Aminia has become the most widely available and eaten street food in Calcutta. Many new restaurants have sprung up and the competition for excellent biryani in Calcutta is only getting tougher. Our recipe of the Kolkata mutton biryani isn't perfect, but it is very, very close. With some practice, planning and patience this recipe will help you make a very good Calcutta-style biryani at home.

⭐⭐⭐UPDATE: 24 June 2018: Biryani version 1.1-We made our Calcutta mutton biryani again today and it turned out even better than the day we filmed the video! What did we change? Read on. 1. We increased the salt in the water for boiling rice from 30 to 45 grams, since we felt the rice needed a little more salt in our previous version. This is something that one of our viewers, Titir Banerjee, had also pointed out in her comment after giving our recipe a try. 2. When pressure cooking the mutton we placed the potatoes at the bottom instead of the top. This led to even juicer and flavourful potatoes this time (and no, the potatoes did not melt). 3. We reduced the meetha attar to 4 drops from 5. This seems to be the perfect balance of aromatics. We have updated the website (www.bongeats.com/recipe/kolkata-mutton-biryani ) with these changes. Biryani really gets better with practice so keep trying to get better!

I made this with chicken last night. Marinated the meat for 30 mins and cooked it in a covered pan on low heat for 30 mins. In a pressure cooker it ll take even less time.I could plate the biryani in under 2 hours . Rest of the process was same. It tasted fabulous!

Bong Eats oooooooh I missed this update.. Just finished cooking this an hour back. Would help if you could simultaneously update the website also with the new measurements. After shifting from Kolkata I was struggling to get a proper recipe for mutton/chicken biryani . I swear nothing like the authentic chicken biryani of Kolkata .. but I would really like to thank bong eats as now I can make authentic Kolkata biryani at home. I tried the recipe step by step as according to the video.wella !! The dish turned out to be amazing. Thank you bong eats please keep sharing such superb recipes of Bengali cuisine .. and yes I am trying everyday one recipe from bong eats. I tried puchka yesterday and I have no words. Even though I am not a bengali. But I love bengali cuisines and bengali biryani is my favorite. I had this biryani once when I went to Calcutta and still I remember its taste I was looking for that authentic bengali taste and you came as a saviour. Thank you so much. আমি জানি না বিরিয়ানি কেনো এতো আকর্ষন করে। আমি একটা এমন গ্রহ চাই যেটা বিরিয়ানি দিয়ে তৈরি হবে। সেই গ্রহে রাইতার নদী থাকবে। পাথর গুলো সব হবে চকোলেট এর। গাছগুলোতে ফলের বদলে মিষ্টি ধরবে। Volcano থেকে লাভার বদলে cream বেরোবে। পাহাড়গুলো সবই হবে আইসক্রিম দিয়ে তৈরি।

Unbelievable effort !! I can imagine what you guys go through filming each episode. The kind of hard work required for each presentation can’t be put in words. Moreover, what I like the most is the clarity of the movies, with special mention to the intermittent zoom you use. The chef is indeed master class no doubt, but so is the film maker. Keep it up.

let me tell you something, the quantity of meetha atar or itar depends on the quality of Itar, there is one that is used almost in every restaurant is mughlai meetha itar. So if ur itar is strong use less, otherwise it will taste very bad. Note : Biriyani looking awesome. :)

First time it was fabulous as I had tried making biryani for the first time itself ..with the help of this recipe ... Now making it for the second time and the handi is on dum !! Always been a great fan of yours... dada , di'vai Had been vehemently waiting for this piece...of wonder There are a hundred and thousands of Biriyani recipes out in youtube,where they would either put the heavily marinated kacchi(marinated)/Cooked chicken/mutton at the bottom or in layers... And every single time i attempted to make it ,the bottom would turn too moist/soggy at bottom and would give an aroma not just the way sweet,nostalgic like...the dokans,and my father would remain silent 😚 Thanks a lot...dada-di'vai You are indeed a blessing to RU-vid...on behalf of all the Bongs of World,not just in recreating,bringing forth the flavours of our Bangaliyaana and our shukto jhaal posto,porota ,kosha mangsho and our nostalgy ,but also in sending down a waves of foodie stimuli... @@shanealam5051 This particular variant of biryani originated from Bengal. It was during the time of the Bengal famines when potatoes were added to biryani. Post famine, the bengalis' could not let go of the potatoes. Just like Lucknow/Hyderabad/Dhaka/Karachi/Delhi etc all have added their touch and adapted to their own version, It will not be incorrect to attribute this magnificent variant to the region Bengal.

Amazing recipe and am totally impressed with the method as shown - rarely have I come across such a fine tutorial. The end notes Saptarshi, are very relevant. Ato koshto kore tarpor noon beshi/kom hole, whole effort goes down the drain! Kudos to the team for putting together something with such painstakingly high accuracy! Loved the video, the music is so soothing and interruption of cooking sounds adds a great balance. My only complain is why are the measurements in weight and not in volume, as in cups and spoons, most of doesn’t have access to kitchen weighing scales.

Chacha ,Khaled lo 250 mai mil jata hai,and the reason for not giving with volume is the discrepancy that we have ,as in everyone's house the cups and spoons would be different,and if you are talking abouts measuring cups and spoons ,then also everyone don't have it.

I am writing the comment while having this Biryani 😊 We are living out of India for a long time and always crave for Kolkata Biryani specially Arsalan style.
