your video has been a great help to me! I did my first batch about 2 weeks ago.. started my second before I left on a family holiday... eager to get home and process haha! Great job! I will try the double fermentation with the fruit! My husband loves the carbonation of the drink. Yes, it is true that you may start your own scoby from a jar of kombucha purchased from the store. You can either 1. pour the entire bottle into a mason jar, cover with a cloth, and let it sit in a dark cupboard or corner of your counter until a new scoby grows or 2. leave an inch or two at the bottom of the kombucha bottle, cover and leave in a dark place until the new scoby forms on top!

I have learned that a little bit of fruit goes a long way and that the extra sugar might not be necessary if your fruit is very sweet. That is fascinating! I would have done that a long time ago if I had known! I've let all the people know who have asked me if you can make a scoby from store-bought. Thanks so much for the info!

To make your own SCOBY, just prepare the tea as she showed. You need a bottle of unflavored store bought Kombucha. When the tea is room temp just add the Kombucha you bought and cover like she did. It takes about 10 to 12 days ( give or take) for your brand new SCOBY to form!

I grew my first scoby with no problem from a Facebook group. Now when it came down to the kombucha f1 it was ok then I did the f2 and that’s when I just didn’t do it right no fizz at all. I found your video and you saved me from giving up. I have fizz on my f1 and just started my f2. Thank you

I read a wonderful book by a Germain kombucha expect about 20 years ago and just want to share one advise about adding the SURGAR. Be careful not to let the water boil for more than a moment or two; (i.e. when the SURGAR is actually added), reason being, if the sugar is overheated, compounds called hydroxymethylfurfural are produced, which can inhibit the growth of many yeasts. (Which are important components of the SCOBY).

hey darling, it is recommended not to use earl greay tea as it has products such as oils in it which can kill or interfere with the scoby.

Loved your video! Got my Scooby from my daughter and have my second brew in my cabinet. Wanted to share an idea that I'm trying. Candied ginger gives that little extra sugar as well as the ginger. My daughter's friend uses that and I love hers. I'm trying candied ginger and a few blueberries right now. Can't wait to see if I like it. Also, I have a friend who was giving me a hard time about the alcohol issue. Thanks for explaining that part of it!

Thank you for your video. I am new at my kombucha and Jun processing. I have plenty of 16 oz and 1-quart mason jars available with the plastic lids. Until I can buy flip-top bottles. I have all my store bought Kombucha jars from the kombucha we drank. So plenty of ready to bottle brews yet only mason jars on hand now. lol It looks like I am just fine starting out with the easy to use Ball Mason jars with the plastic lids. Thank you again... : )

You can definitely tell if it's unhealthy if you know what a healthy scoby looks like. Black spots are a good indication that something is not right.

Today is day 7 of F1, I have a beautiful scoby development ( I’m very excited to see the formation of it happening) I tasted it today, however, to me it kind of weak with some carbonation. I think I’ll wait a few more days before I move on to bottling and F2. Any advice?

Thanks for your video. I found it easy to follow. I have ordered my scoby. I have collected a number of wine bottles with screw top lids. Do you think that these bottles will be strong enough to withstand the pressure of the fermented kombucha?

You actually don’t have to wash and clean your jar in every brew! It’s fine just adding the new sweet tea into the jar. Of course cleaning the jar after several batches would be recommended.

This was really helpful! My bf and I drink a ton so this will save us money for sure! Though, I have never seen anyone add sugar to step 2. I think I might skip this as we arent crazy about sweets... well... im not. lol thanks again for taking the fear out of making my own.

Hi Eva schonfeld! You should use whatever you feel comfortable using. I don't mind using tap water because I boil it to brew the tea. For purer kombucha, you could use pure water and organic tea, sugar and fruit.

Hello! First of all, thank you for your helpful video. I have a question, maybe you or someone can help me. I made kombucha tea and let it sit for 10 days. After I unveiled the jar the color of the tea wasn't so yellow as yours. Mine was a light brown. Where do you think I messed up? Is it too much black tea? Is it too much sugar? I should let it sit for 14 days? Thank you.

MyJourneyToNeverEndingJoy it's a little bit of an acquired taste. If you want to see if you like it, buy a bottle at the store. I think it's yummy tho! Homemade lasts about 3 months in the fridge before it starts tasting a little old.

First of all, let me say how cute you are! Love your video! Love you!! Then may I ask , as I didn't get that part, can I start my own scovey or how ever you spell it, myself from my first batch?. Haven't done this yet but I will for sure. Second, can I recommend you use organic black tea? Lipton is loaded with pesticides. And I'm sure you are using organic fruit. Lastly, I am a fan! Tami Kenan Goltry, hey lady! Yes organic anything and everything is BEST! And when one day I can afford it, I'll only use organic in my home. 😋You have to acquire a scoby from either a friend or you can order one online. Once you have a scoby and start making kombucha, each batch will grow another layer onto your scoby which you can separate. Use the new growth for your tea and give the older layer to a friend or feed to your chickens. 😘

after the 2nd stage of putting the fruit into the kombucha what do we do? After day 3, can we drink? and what do we do with the small scoby that has started?

Shari Achey after you add the fruit, put the jars back in a dark warm place and let sit 3-5 days. I taste it around three days and let it go more if I think it needs it. You can certainly drink the kombucha after just the first stage. It’s up to you. If you’ve made tea for another batch then add the old scoby to the tea and place the new right on top. If you’re not ready to brew another batch you can place both scobys in your brewing vessel (or a smaller glass jar), completely cover with kombucha liquid and store it room temp til you’re ready to do another batch.

Thanks for sharing. I am just collecting info about this since becoming aware from a friend. I admit to being grossed out by the "thought" of the bacteria and the appearance of the "scoby". Something I will have to overcome. I am more grossed out by the kefir because just plain milk is gross to me. I have been having a small serving of store-bought kefir each day. I am wondering if the kombucha benefits for gut health are equal to the kefir benefits. I LOVE Earl Gray tea, green tea - and fizz. So this looks really appealing to me. Also I wonder how much sugar one ingests from the kombucha..?

Shirley Ellis I don't like to drink plain milk either! Im easily grossed out by foods (sometimes meat is hard for me to eat) but kombucha is pretty tasty to me! I'm curious if the benefits are equal to kefir too! I'd definitely rather drink kombucha!

The Simple Life my first batch tasted so good I almost hated to bottle it up for second ferment. Second batch is fermenting. I used coconut sugar.

ThisIs Slammin I love coconut sugar! The second fermentation is completely optional. The second ferment is where you get fruit flavor and carbonation, but I know people who never do a second fermentation. It's whatever you like. So glad you're happy with your batch! 👏🏻

I have been making Kombucha per your instructions for 5 cycles. My scoby is almost ready to be split which I’m super excited about making more quantity. I have a few questions. 1) The sediment in the first brew jar. Should I strain that? 2) Burping my bottles? I’ve been burping them and they are erupting. Is there away around this? Thanks so much.

Brown, stringy sediment is the yeast part of SCOBY. It is healthy yeast to the body, adds B vitamins.

Erupting bottles are WELL fermented. Time to refrigerate, to slow the fermentation! I open them outdoors, to save on kitchen clean up!

if i were to nitpick, i would point out that after you sterilized your hands, you contaminated the one by turning the water off. use the paper towel to turn off the water and then if you must dry your hands, i would recommend a separate paper towel that has not come in contact with the dirty faucet. one last thing: 3/4 cup starter is a bit on the light side when brewing a gallon batch. i would recommend a cup and a half, or roughly 10% starter booch per batch. good video overall, cheers (:

J.T. Emers yes, the jar is glass. Glass is the safest and recommended vessel material because it won't react with the acidity of the kombucha.

Earl Grey isn't got for the scoby, the oils can harm it. But if you can make it work go for it.

Doesn't tap water have chlorine in it & wouldn't that inhibit the fermentation process??

Hi I've just tried to make my first batch. I bought a scobie on eBay and followed the instructions but it doesn't seem to be doing anything :( it's been about 5 days but it's not fermenting and the scobie is just sitting on the bottom. Any suggestions? Thanks

Michelles Crafty Corner try making your own scoby and use that. Most likely your scoby doesn't have enough starter tea. Or it could be a plethora of reasons. Not enough sugar. Not enough REAL black tea (they contain the necessary acids that are good for the scoby). Not enough air flow.. etc etc. if nothings happened around day 7, place your jar in a dark place and flash and light to the jar for vinegar eels... those are roundworms that love vinegar.. toss it out if you see that.

What do you do with the extra layer of Scoby if you don't have anyone to give it to?

Iris Lovespeace keep the new layer until it grows thick enough to use on its own, then get rid of the original scoby. You always want to use the newest scoby. You can either throw it out or feed it to your chickens. Or if you’re brave, eat it yourself. I can’t say I have ever done the last one...

You can always keep extra scoby in what’s called a “scoby hotel” which is just a glass jar that houses extra scoby in kombucha liquid. But if you don’t give them away or whatnot, eventually you’ll be overrun by scoby.

When you say its ready (1st ferment) how do you know?

From Chronic To Cure you have to taste it. If it still tastes like sweet tea, if not ready. It should taste tangy. Basically, It’s ready when you like it’s flavor. I prefer mine nice and tangy.

So could you just start a brew just to get a scobie or do you have to have one to brew period. I'm thinking that at some point when Kombucha was first made they didn't have a scobie (not sure if I spelled that right)? My fear is I don't want to buy from someone on the internet and I don't know how it was made or if the schobi was kept clean in the process of shipping. Someone anyone please help. Scobie

Monique Williams See if you can get one for free. People who brew it end up with loads. Also, the only at you could "make" a scoby is to buy a bottle of raw kombucha from the store and make up a batch of sweet tea. Pour the bottle in which usually has a tiny baby scoby in it. It can take about 3 or 4 weeks for it to grow. And then you use some of that liquid and a new batch of tea to make a batch to drink. If recommend buying a bottle to try, if you like it, invest in a scoby or grow one if you're not in a rush. There are quite a few videos on here showing you how. I would love to know how the 1st ever scoby came to be. Especially since it seems impossible to just grow one
