Korokke コロッケ - Japanese Style Croquette
Korokke コロッケ is a deep fried snack adapted from the French croquette. It’s usually made by mixing meat, seafood or vegetables with mashed potato or a white sauce. It is then rolled in flour, eggs and panko and deep fried until crispy.
This recipe is for the mashed potato version. What’s great about this snack is (a) it’s deep fried potato, can’t go wrong there, and (b) you can add whatever you like to it. If you’re vegetarian, add your favorite cooked vegetables. Have some tuna? Throw it in there. Want to keep it super simple? Just use mashed potato and that’s it.
Korokke can be found in almost every supermarket and convenience store in Japan. You can also find it in many Japanese restaurants as an appetizer.

Yields: 8 small korokke
Ingredients:
1 large potato, peeled, cubed, boiled and mashed
½ lb of ground pork
¼ cup of chopped onions
1 diced carrot
½ tbsp of minced garlic
1 tbsp of soy sauce
Flour
Beaten egg
Panko
Vegetable oil for frying
Directions:
1. Boil the cubed potato until tender. Drain and mash in a bowl. Set aside to cool down while you prepare the pork filling.
2. Heat a little bit oil in your pan over medium. Add the garlic, carrots and onions. Cook until the onions are a bit translucent. Add the ground pork and break apart with your spatula. Cook until most of the pink is gone. Add the soy sauce and continue to cook until pork is completely done.
3. Combine the mashed potato and pork filling, mix well so everything is distributed evenly. Grab about 2 tbsp worth of pork mashed potato, form a patty and set aside. Repeat until all of the pork mashed potato is gone.
4. Coat each patty in flour, then egg and finally panko. You’re now ready to fry.
5. Deep fry each korokke until golden brown and crispy. Drain excess oil on a paper towel lined rack.
6. Enjoy warm as if or with your favorite dipping sauce!
Notes:
Personally, I think there’s enough flavor in these korokke that you don’t need a dipping sauce. But, if you are looking for dipping sauce suggestions, I would try it with Kewpie mayo and sriracha. Yum!
