I am trying to undo the bracket, i tried pushing up from under the bracket - but was not able to remove it. is there something else I can do? thank you

I just installed this 180/80 single track system, but how can I add more stability to the shelves since they are just resting on top of the brackets?

You can add a bead of silicon or caulk where the shelf meets the support. After dry, it should be a bit more stable

I'm installing the 80 series for shelving as well and I found a part on Woodworker Express that should help. Under shelf standards and brackets, filter by Knape and Vogt and select the standard fastener product type (www.woodworkerexpress.com/154-series-shelf-fastener-anochrome.html). I believe it slides onto the bracket under the shelf, and you can fasten it to the shelf with screws. This should add stability since the shelf will be fastened to the bracket and not just resting on top. If you have plywood or some type of wood shelf this should be pretty easy, but if they're metal it might be more difficult. Hopefully this helps you out. Good luck! Edit: There's one other thing you can do if you're looking for extra stability and strength. If you nail on front edges to the shelf (if they're wood) it will make them more rigid.
