Ingredients:
Sponge cake layers
6 eggs
1 cup sugar
1 cup flour
1 tsp baking powder
Bake at 375F for 40-45 minutes.
Meringue layer
5 egg whites
double amount of sugar (about 1.5 cups)
1/2 tbsp lemon juice
pinch of salt
Bake at 240F until completely dry.
Domes for about 2.5 hours
Merengue ring for about 4 hours
Cream
226 grams butter (2 sticks)
1/2 cup powder sugar
2 cups of cream + 1.5 cups
add more powder sugar if needed (to taste🔺)
🔶The cream covering the cake is not sweet. Add powder sugar to taste if needed.
Decorating
1 lb of roadsed hazelnuts (roast them extra for best result)
1/4 cup dark chocolate
Tips:
*Use WHITE sugar to for meringue.
*Check with wooden stick if inside of meringue is dry completely. If doesn’t dries completely it can melt once the cake is put together.
*Meringue will crack if you open the oven door so don’t open the oven first few hours.
*Once you made the meringue cream, work with it right away because with time will will melt and change structure.
