I screamed as well! PSA to anyone making chocolate strawberries: add a bit of coconut oil to help it set, if you like. If you add anything but pure oil/fat to melted chocolate it will seize or turn clumpy. You CAN pour hot heavy cream over the chocolate to melt it and make a ganache, if you want a thinner texture.

Tempering is the right procedure for melting the chocolate without shocking it. You have to simmer water in a pot, put in the chocolate in the bowl and you’ll melt the chocolate through steaming it. You should never melt the chocolate in a microwave oven or oven because it will ruin the chocolate and there’s nothing you can do to fix the consistency. Emma overcooked it🥲🥲
