I blend an onion,red pepper,garlic,fresh mint & flat parsley in a blender. Then squeeze the moisture out with a clean tea towel and mix with lambs mince. Plus cumin,salt and cayenne pepper,lamb kofta on a skewer. Less likely to fall off
Top tip: when cooking in a tandoor, put half a small potato onto the end of the kebab nearest the fire. It'll protect the meat from burning and ensure a more even cook.

SimpleNick - Nick Collins got it done this evening,had first fire up but I think I put too many coals in and now bottom pot has cracked (one long one in a straight line) doesn't seem to affect the performance. I'll try cooking with tomorrow! I will persevere!
