Lamb stew - my grandmother’s way 💕
Ingredients:
* 3 tablespoons vegetable oil
* 1 onion, chopped
* 4 green chilies, slit
* Few sprigs thyme
* ± 20 whole peppercorns
* 1 ½ teaspoons ginger & garlic paste
* ¼ tomato, chopped
* 500 grams lamb/mutton
* Salt to taste
* ¼ cabbage
* 2 large carrots or 4 medium carrots
* 150 grams green beans
* ¼ cup peas
* 2 tablespoons all-purpose or cake flour
* 2 large potatoes
* Boiling water as needed
Method:
* Heat the vegetable oil in a large pot on medium-high heat.
* Add in the chopped onion, slit green chillies, thyme & whole peppercorns. Mix & sauté until the onions are translucent.
* Add in the ginger & garlic paste & the chopped tomato. Mix & cook until the tomatoes are soft.
* Add in the lamb or mutton pieces & salt to taste. Mix well & sauté for 2 minutes.
* Thereafter add a little boiling water, cover & cook for 5 minutes.
* Add in sliced cabbage, cut green beans & sliced carrots. Cover with boiling water, mix well & cover, allowing it to cook until the veggies are almost soft.
* Add in peeled & cubed potatoes - add more water if needed & cook until the potatoes are almost soft.
* Add in the peas & cook until the potatoes are completely soft.
* At this point make a slurry with the flour & some water - it shouldn’t be too thick or too runny, add the slurry to the pot & mix well.
* Allow the stew to thicken slightly, turn off the heat & plate.
* This lamb stew pairs well with soft white bread.
