Lasagna Soup.....there's an idea! My Dad even liked it and he normally doesn't care for this sort of stuff.
This is pretty much everyone's Lasagna Recipe; only differences is the additional of a couple cups of broth that you wouldn't normally find in Lasagna and then the lasagna noodles are broken up into the pot. It really is pretty special!
For this recipe I used the following:
2 Italian Sausages with casings removed
1lb ground beef
1 medium onion
Garlic - pick your own quantity
2 quart jars of my own home canned tomatoes/juice
2 cups vegetable broth
7 lasagna noodles - broken up
black pepper
Italian Seasoning
1cup Ricotta Cheese
1 cup Mozzarella Cheese
1/2 cup Parmesan Cheese
Parsley
For the Garlic Bread
1 loaf of French Bread
1 whole bunch of garlic roasted in the oven @ 350F for an hour or so should be fine
1 stick of butter
Literally; all you do is make the spaghetti sauce/lasagna sauce/pasta sauce that you would normally make; soup it up with your favorite beef, chicken, bone, vegetable broth - break up your lasagna noodles and cook for another 10 minutes.
Mix up the cheese and drop a scoop on top; serve with your favorite garlic bread.
