SPINACH GNOCCHI RECIPE
Ingredients:
1 kg of starch potatoes
100 g spinach
150 g of wheat flour
1 tablespoon of salt
1 egg
Basil sauce:
1 pot of basil
40 g butter
salt pepper
150 ml of vegetable broth
Decoration:
100 g parmesan cheese (I used vegan mozzarella-style cheese)
HOW TO MAKE GNOCCHI:
1. Boil the scrubbed potatoes until soft with the skin on. Leave to cool.
2. Blend the washed and dried spinach.
3. Puree the potatoes and add them to the spinach. Add flour, salt, and beaten egg.
4. Knead quickly until the ingredients are combined. If the mixture is too thin, add some flour.
5. We divide the mass into smaller portions. Form 2 cm thick rolls on a floured countertop. Cut the rolls into 1 cm thick pieces.
6. Boil water with salt in a large pot. Add the gnocchi in small batches and cook over low heat until they float. Add it with a slotted spoon.
HOW TO MAKE BASIL SAUCE:
1. Mix the vegetable broth with basil, and season with salt and pepper.
2. Add the butter and when the butter melts, add the gnocchi.
3. Keep the gnocchi in the sauce until it heats up.
HOW TO SERVE GNOCHCI (suggestion):
Place the gnocchi on a plate.
Sprinkle with cheese.
We can put a few basil leaves on top.
