Very helpful, thank you! How about smoke.. does the baffle plate just shoot the smoke to the back and up through the chimney and missing the meat or do you find it to have even distribution with the holes and the smoke is hitting the meat?
With tht mod u said it works to lower the temp so what happens if I need a higher temp for searing or diff style cooking? Do I have to remove the baffle to gain higher temps? Or does it just make what ever temp iwant even in all areas of the charcoal side?
You can just take it out. We don't bolt them in anyways, so you can take it out and scrape it clean. you can get pretty hot on that cooker with the baffle though. Stack always wide open, and you can open the intake all the way!
