Breaking In An Offset Smoker Or Gas Grill | Seasoning Your BBQ

Before firing up your new Offset Smoker or Gas Grill, your BBQ will benefit from a break in seasoning. You season your barbecue to protect the grates and inner surfaces from rust that can produce a metallic taste in your smoked or grilled food. Much like seasoning a cast iron pan, all surfaces are covered with vegetable oil before completing a low and slow burn in. After all, you want to taste all of the love that went into your secret dry rub and favorite barbecue sauce, and not the charred taste of burnt storage grease or packing oil. Breaking in your new smoker or grill while it is new will also extend its life with a protective coating you can refresh after each use by continuing to oil all of the interior surfaces. Make your backyard barbecue time something friends and family remember solely for the great food !

They sure last a lot longer when ya break em in and get that hard coating of the cooked down oil on there - and then oil it between uses so that keeps building up... Thanks so much for watching !

Great video! If you reverse the part mounted on the drop lid, it's a handy shelf when the lid is closed.

How much does the damper on the fire box affect the smoking? Looks like a lot of air and heat can escape on the flap, I see lots of sunlight … your thoughts?

You are gonna love it ! They hold heat / temp great... They dont gobble up charcoal... And they are very adjustable with both the air intake and the dampener on the flu...

A little plus side to the combo ... If you ever have just enough charcoal and chips to create smoke, but not enough to heat up the grill ... You can always crank up the gas side, as you saw, and heat the smoke grill to temp. Not quite the same as heating it up with the charcoal, but better than nothing. :)

The hot plate on top of your smoke/fire box is on backwards. It's supposed to be flat when the lid is closed. I RTV650 sealed the 2 halves of the fire box and gasket sealed the lids of the cook chamber and fire box. I just did my initial burn in today and seasoned it up nicely. It was a windy day and my fire box damper stayed closed. I stayed consistent at 300 degrees with the chimney wide open. Ready to cook my first piece of meat.

Pretty nice and I see those welding gloves you are wearing. The fire might have gotten real hot because of those big chunks of Hickory you tossed in. I have a chart of Woods for Smoking in a pdf file I'm just not sure how to get it to you. Man you are gonna have some fun with that thing. Ya'll stay safe, God Bless

Heyas Ron... The book that came with the smoker had a real nice list of what hardwoods go well with what foods... I thought it was a nice thing of them to toss in... Now I don't know much, but I really couldn't disagree with anything on their list... I should have shared that... Maybe I will in an upcoming video... Good call... And yes, that hickory was about the last thing burning as it turned to coals while the other coals were long burned up... Man they smelled good though... Even after the fire was out, you could smell it was all through the coating inside the grill... And believe it or not - Weber made those gloves for grilling ! ahahaha I have some really nice welding gloves that would do in a pinch, but those were actually marketed for grilling... (I can see me borrowing them if I can't find my welding gloves though)... They really surprised me, so I grabbed some (Lowes if you are interested)... Thanks for watching... Now the fun can begin !

My buddy that smokes has a bunch of 5 gallon buckets in that he keeps different types of wood chips in for smoking, LOL all labeled and ready to go. He uses hickory but also uses pecan and apple (his favorites) and many other types. He said he couldn't find any walnut, so I went with him a showed him where to find some limbs that have dropped. Have fun my friend. I don't think I would smoke any crawdad's tho. I use em for catfish bait. Hahahaha

That sounds like a great idea... We are looking for one of those weather proof storage benches that I can keep my charcoal near the grill in... I see some the other day, but they are awful pricey for what they are....

What did you use to first clean out the grill? Was it a plain wipe down, or did you use soap and water? Also, was wonder if a internal cooking thermostat would be good to start that first burn off. If you end up getting 2 different temperatures, then the outside thermostat may need readjusting.

With the styrofoam bobbles in there, a dry wipe was best at first so they did not get hung up in any kind of cleaner... It was bad enough they were stuck in the packing grease / oil... LOL And yes, we checked our using our meat thermometer VS our external gauges but they are about spot on (about 3 degrees off each other)... But any good internal sensor would be a good use...

Some did end up burning off, what we could not wash / wipe... Be sure to let it burn the first time until it quits smoking...

I usually watch for any smoke and let that finish cooking off, but then you can just roll... No need to wait...

The warming plate on the smoker looks like it's installed improperly. Shouldn't it be flat to rest a plate on it? The slant prevents that Oooops someone beat me to it

I had thought that myself... Do you know of any way to correct for it or is there a temperature safe seal that you know of that I could remedy the problem with... Or is it just something I am going to have to live with ?

Amazon sells a seal. Lava rock brand , works very well. Its self adhesive. Also get the food grade silicone from them to seal firebox to cooking chamber. All from lava rock. And your temps will come way down. Good luck !

LOL I bought the floor model, so even the warmer shelf / heat shield / whatever it is on the firebox is upside down (as almost 100 viewers have mentioned) and I still cannot figure out how to get a wrench in there to flip it (they did it, so I should be able to undo it you would think)... In any case, I appreciate ya taking the time to respond ! I will hunt that stuff up directly !

Great stuff. Im ol school on grilling and this right here helps a lot. When the lights go out n its a freeze...you can still have a meal with this tool.

Since that unit was used, even on only a break ln burn, you still need to re season it after every use, oily metal wont rust. Spray oil is the easiest way, but pork grease is the best, that side burner is the way to start your coal in the chimney, no news print and only takes one minute to start, still takes a few to get up to a good burn. I poor those hot coals onto wet wood chunks and more coals in the side burner for longer cooks. The outside of the unit also needs seasoning as well to prevent rust.

Thanks for watching... The final segment of the video explained we were waiting for it to cool so that we could oil it again (with the spray oil we showed) before closing it up... Not sure I am comfortable lighting a chimney on the gas side burner given the number of hot sparks and coals that fell through while it got up to a good burn - especially given it is right over the gas line / bottle... I will add the seasoning of the outside to a maintenance video later, for now, we were following the manufacturers break in procedure... Just as sure, someone would have taken issue if we had not... It's usually a win / lose for the video maker when it comes to opinions, which can vary widely. I do appreciate you watching though... Thank you for the support.

Understand 100% where you’re coming from, but a fact many Americans aren’t aware of, burning is the recommended way to dispose of a tattered/damaged flag. Not in public, but in private and respectfully. Most times, your local VFW or American Legion post will be proud to take it from you and dispose of it appropriately.

One thing we found out when we seasoned ours was that you need to wipe down the vegetable oil on the outside before you get it hot, otherwise you'll have a sticky residue

Yes, a very thin layer will smoke off, but thicker it can get sticky... If it gets to be a real problem, flax seed oil is a little more forgiving...

Instead of using newspaper, you can just set that charcoal basket right on top of the gas burner on the right and light it that way.

We were able to pull 99% with just dry paper towels, and then we burnt off the rest... There was not very much though to begin with...

Thank you for the info! Do you know if the thermometers are accurate? I had the gas side all the way up and put some temp probes in there and they melted! I think it was up to about 700 degrees! Recipes?

I use a digital probe that feeds back to my phone, and I was surprised at how close the thermometers were (like within 5 degrees)... We will be doing more grilling / smoking on the channel very soon, so we hope you will follow along...

just purchased oneo f these a few weeks ago, i seasoned it for a few hours the first day, and have continued to add oil periodically to keep it well oiled up... ive cooked both sides and had great results. i did however, buy some smoker gaskets to seal up the lid on the charcoal/smoker side.

I ahve had this same unit for over a year. I use the side burner for lighting chimney. I use lump or briquettes fill the chimney place it in box and use sticks for fuel and smoke on long cooks. I have a bigger stick burner for bigger cooks and such as it uses more fuel. This unit is a nice size for whatever even hamburgers. The gas side ends up being for a hot dog or something. Mostly a shelf for cooking on the other side lol. Great video. not many out there on this particular model. Keep on smokin!

Also LOL, I use spray bottle with the cheap veggie oil and spray inside and out and wipe off excess on outside. Keeps it nice and purty. I watch this video when I first bought the unit over a year ago. Just thought I would add my 2 cents.

Hey Bumblebee, thanks for the video. I saw one of these grills in Tractor Supply up here in Maine and am thinking about buying one. Your video really helped me learn what I was getting myself into, as I've never grilled on anything but propane. I'm curious though, how has the grill held up since you got it? I'm worried about buying something that looks this cool, promises so much, and has a price that may be too good to be true...

Hey nice combo. I smoke a lot and have found that using your standard charcoal burns cooler than lump and lasts longer. Then by adding real wood it will spike the temp and settle in. Also direct sun light seems to make my smoker run hotter. Just some food for thought but offset cooking is a learning curve. But it is a tasty lesson when done right.

You being in TX, I am sure you could see that just the sun on that black grill is about enough to get to 250 degrees... It certainly did not require a fire box on one side and 3 gas burners on the other... LOL We live and we learn... LOL Thanks for watching !

I got as much as I could with just paper towels (dry)... Once I had 99% of it, I used a rag and clear water... In the end though, you just wanna make sure you get in a good hot long burn in... You may be seeing the smoker and grill sides of the Oklahoma Joe... The gas side has shields over the burners (under the grate) and the smoker side just has the grates...

Just bought the same grille combo/I will wipe it down and season it thanks! I do soak my wood 24 hrs before I will have to play with heat also. I'm used to LP smoker!

Nothing better than seasoned smokers and cast iron to. They smell great the minute you start a fire. Oh good gravy now I want some bacon...cooked in/on cast iron...on the grill!

I have a neat flaming bacon trick I might share one day... Its too funny... But I can cook awesome bacon on a gas grill... Its a flaming horrible fire ball, and SOOOOOO good when its done !

To test how even it cooks and get air flow correct you can use can Biscuits. Works great and they are cheap.

I have a full size 5 foot cast iron smoker I got from my grandfather. Its too big for just everyday cooking so I just got a Texas trio, its my first new grill. What did you use to clean that packing grease?

Use soap and water, but wring the cloth out so you get as little moisture inside as you can, then dry with paper towels (and burn the paper towels during the break in... LOL)

Yes, but just lightly... It is really humid here, and things rust even when covered... It does not hurt, just dont get too crazy with it...

Sorry for the delay getting back to you... It has held up amazingly... We do keep it oiled lightly and covered... It smokes a little to burn off the oil at light up, but thats like 3 to 5 min and no more... That in itself has helped season the entire smoker... Its a good value for your money, have no concerns there....

I did not coat the burners, though I am sure they caught some overspray... When you set yours up though, but sure to spot check your burner to make sure all the holes are open and not blocked in any way... Good to check it when you clean it too...

How is this grill holding up after having it for a couple of years? Also, does it seal up nicely or is smoke escaping through any gaps? I've seen another video for this grill where they had to use some gasket tape to get a better seal. Really enjoyed the video.

It has always lost a little smoke, but it is not really an issue... I always check the bottom of my meat for smoke and / or smoke rings when we slice it and I have always been happy it is holding plenty to do the bottoms as well... I am still really happy with mine... I can understand the gasket tape, I just don't think I need it at this point... At least not yet...

Looking to purchase this exact grill. Read a lot of reviews about it having major rust issues even when not left in the elements. Have you had any rust issues?

We have had ours a few years (in the elements) and it has a little rust but not much... About any grill will after a few years... But ours is not bad enough to worry about it... 5 min with a wire brush and some high temp paint and you would never know...

Great video, I had no idea that you're suppose to "season" your grill before use. Is that in the user's guide. How often are you supposed to do that?

You know, it used to be in the owners manuals, but I dont recall if it still is... It works much like seasoning a cast iron pan though... I season mine whenever it gets to looking like a dull finish, or before I use it each year, or for sure if it shows any signs of rusting...

Several others have suggested that as well... We showed it with the paper because not everyone will have a gas burner on a charcoal smoker...

Hey, I wanted to say thank you for your video. This is the first smoker I've gotten and I will admit the last grill I had was in terrible condition. I've tasted smoked meat and I have wanted to try it myself. I watched your video and it seemed you had trouble keeping the propane side steady. I dont know if this helps or if someone else noticed this but if you turn on the middle burner only. It holds right under 300 degrees. Thanks again for your video.

Great video, thanks for posting. Quick question: How many pounds of lump charcoal do you start of with to get the smoker to 225? Also how often do you see needing to add more charcoal? How much? Thanks again for posting and keep smoking.

I start out with about 1/2 a bag... After that, it is all up to the conditions (wind, vents, etc) but it seems to hold temp really well !

Sure, as long as the packing oil is removed... But after that, we season and reseason both sides randomly when we feel they need it, or after a good cleaning following several uses...

Better than I had thought it would... It took a lot of weather... But I touched it up with some high temp spray and it is right as rain... I do know some people are adding wood stove sealer around the doors to hold more smoke in, but ours seats down pretty well on its own...

I got mine today. It has a decent amount of packing grease inside and on the attachments, any suggestions on what to use to clean it off before coating with vegetable oil?

I got 99.9% of it out with paper towels... Then once it looked "clean" I went ahead did the veg oil and gave it a good burn in (a couple times, lol)... You can add the extra step of soaking as much out with (sopping up) with paper towels as you can, then wash it with a warm soapy water and rinse, then do the veg oil and burn in... I have seen people use oven cleaner to cut the grease, then did a burn in, then veg oil, then burn in again... You will need to decide what you can live with...

We used that Weber high temp oil, and just a light dusting... We did not notice any smoking from putting it on the outside, though we used very little, and then let it sit in the sun until it appeared dry before covering it again... I hope that helps, and my apologies for leaving that out. Happy New Year

No... I have been getting good smoke rings on the bottoms, so I didnt really see the need... Temp control has been pretty reasonable and consistent too... I think you'll be happy with it, unless your fit and finish is dramatically different for some reason...
