When i did this, i couldn't find horse chestnuts and didn't fancy the sage but i doubled up the pastry anyway. And the end result (cooked at a higher temp in a gas oven) was pretty spectacular. it rose up and gave me this awesome crust. I cooked down the liquid to more of a reduction and it was thicker and simply wonderful. Good use of left over turkey but for sure could be done better with chicken.

Love the look of this! I often make a very similar pie with leftover roast chicken and leeks, but I'm half thinking about making a roast turkey again on Thursday 7th, as it's the last day of Christmas (traditionally called Little Christmas here in Ireland, don't know about the rest of the world) and if I do, I'll be trying out this recipe with the leftovers! Love the chestnuts in the puff pastry... Off to check out your channel...

Cracking recipe. Something I was always taught was to leave the overhanging pastry on until it comes out of the oven - that way, you can get nice, neat edges when you trim afterwards. It's especially important when baking pretty, sweet things like tarts!

I always thought meat pie have not enought veggies, well it's normal it's MEAT pie... anyway I stll feeling not comfortabe with eating that on my free day, and add side salad. Your pie is EXACLTLY what I needed! It is full of veggies and looks tatsy. I like the nice pie cover. =) Healthy and tasty exacly what I wanted! ♥ I'm french and I'm discovering the english meat pies, tried some but yours is great. This pie looks amazing and so full of flavour! I don't really get the point of adding so much stock and the crème fraiche and then cooking the filling in them for only a couple of minutes and straining it though. Wouldn't it be better to just add a couple of ladles of stock and the crème fraiche (without cooking it, which I tend to avoid doing as it loses it's creamy consistency in my opinion) to bring everything together? Sure, you wouldn't be left with the gravy at the end, but you could use a bit of stock and cornstarch to make up for it.

I have never used leeks in anything, can you tell me a little about how they taste please? What other dishes do they go with? I love to make homemade chicken pot pie do you think I could start adding leeks in with it? Would I prepare them the same way you did in this dish? Thank you ..

+Brooke Cook they kinda taste like spring onions but not as sharp. they have more body and therefore can handle long cooking times. Awesome with pork, salmon, chicken, etc... try it once and you might just fall in love with it. But remember to clean thoroughly, they tend to have sand inside. Cheers !

+Brooke Cook Hi there! Leeks taste like a very sweet onion with just a hint of garlic to me. They are much sweeter as I said and don't have that sharpness which is typical of a regular white onion. Bear in mind that the fact that they are so sweet means that they contain more sugars and therefore tend to burn very easily. You shouldn't fry them off like you would an onion, but stew them as the chef did. I usually use leeks in soups, pies (a chicken pot pie would be awesome with stewed leeks!) and many other dishes. You could substitute onions with leeks in pretty much every recipe, provided you don't fry them off on a high heat and with no liquid apart from oil, as I said before. I hope this helped and believe me, once you start cooking with leeks and getting to know this new ingredient you will love it, I promise ;) Happy holidays!

+Apocalyps Chuffed you like the video. lol on the crimping, it does seem a little nonsensical to crimp and then cut off. However when I was practicing the recipe, on a few occasions when I would pick up the pastry to put on the pie dish the two sheets would open up and the sage and chestnuts would fall out, so I decided to go a little over the top, to make sure it does happen to you guys. +Adam R Like a strong spring onion, but once cooked down they become sweeter. They are from the same family as Onions, Shallots, Garlic and Spring Onions .
