I used this recipe as a base to make lemon tarts this weekend. I ended up making a shortbread crust for the tarts but I did also tweak a few things with the cashew cream. I agree with xxAlly1093- it would've lacked pizzazz if I used the original recipe. I added the juice of one whole large lemon, the zest of one lemon and several drops of organic food coloring. Color doesn't really matter but if you're shooting for something that's supposed to look bright and cheerful, similar to what a lemon custard/cream might look like, I would definitely add it.
I made these yesterday Oct 21st, and when my loving steak and potato husband came home, he loved this Lemon tart and it was gone in about 60 seconds! Ha Ha ! Those two bites I got where fantastic! But I didn't have dates for crust so I used 1/4 cup GF grinded up oatmeal with a tsp of honey and 1/2 tsp ground vanilla with Himalayan salt. Thank you this recipe is going in my cook book.
Thank you. To have friends like you to hang with would be so fun. I've used cashews for queso cheese, mini cookies/cakes, rosemary biscuits/cakes, others. Wonder with vanilla up in price to use some other less costly favorings? To make this I'll have to change a few things, but only a tiny bit. They are so pretty & I can have them. Great recipe. I added 2 passion fruits to my cream and made the base using pecans, flax seeds, goji berry, maca, raisins and dates. Very delicious! A dessert that must be good for you!!!
I don't think the lemon cashew filling is going to make it into the fridge, let alone the crust...cuz it's going right in mah belly! Great recipe Jason

It looks real good and tasty ~! I have a food procesor to make the pi e crust but my blender doesn't work when making cream like texture~if you have any tips on making frosting or cream with out a blender ,please share on your next video~thank you~

I have a question regarding cashews and dates.... My research points to cashews not being really raw. They've got to be steamed at a high temperature in order to extricate them from their toxic covering. And when I went to my local food co op to buy several varieties of organic dates, I had them contact the various companies and found that they ALL steam them after drying at high temps in order to plump them! What say you all?
Those are beautiful!! And I love knowing that they're all vegan, TOO often I see little cakes like these being sold with dairy and meat on top, yuck!! What you made is perfect. Himalayan crystal salt? Seriously? Who has that sitting around in their pantry? Do you really think the average Joe can just swing on down to Kroger or Wal Mart for some Himalayan crystal salt? What ever happened to using good old fashioned table salt? Could you people possibly be more pretentious with these ingredients?
Yes actually more and more stores are caring these ingredients. HCS has the natural minerals left in them and we need them in our bodies, as the TABLE salt has been over processed and causes health problems. I bet you can find it in your store if you look.

my question is, i can see how it might be valuable to post a "negative" comment about the food, as that may lead to the recipe becoming better, but why comment on something that you cannot change (their personality) in an insulting manner? and by comment, i am not referring to actually thinking he has a bad personality, i'm referring to actually including it in your comment under the video? people complain that they don't get what they need from others, when they themselves don't give it to others.
