Lemon Icebox Pie 

Delicious! Just like grandma's! My grandmother passed away earlier this year so I decided to dedicate my Christmas dinner to her and make the dishes she normally cooked for the holidays. I had her recipes on my computer but it crashed which sent me to RU-vid in search of a recipe that looked similar to hers and her u r! :) This is the first time my family had it and it was a hit! Thank u so much for allowing me to have a little piece of my grandma with me this Christmas! Happy Holidays!

Pie looks good, but a small suggestion to thicken it up a little. Just add 1/2 teaspoon of cornstarch mix with some lemon juice (NOT WATER) mix well and add it to your pie filling and this will help thicken it up. I recently did this for New Years 2021 and it worked really well, the pie was set very well, it still had that creamy filling, it was delicious. My family ate into those two pies like crazy. I'm not the one that likes to tell others what to do with their cooking (LOL), it's only a suggestion. Be "BLESSED"

Glad you mentioned not baking the pie...I ate this pie all my life and never worried about the eggs and I'm 70 now.

FIRST IF ALL I love anything with lemons in it and I made this pie 4 the very first time in my life last week and I am HOOKED ON IT !!! ABSOLUTELY DELICIOUS !!!

Recipe 1 pie crust 2 cans sweetened condensed milk 2 lemons = 1/2 cup lemon juice 3 egg yolks

I've seen recipes, added 3 TBspoon cool whip or cream cheese, bake 5 min if eggs 😊

Another thing that helps it set up a bit firmer is to mix on a very high speed where you are whipping air into the mixture

This is the only pie that will be sitting in my refrigerator 😆 l grew up on this pie, it's so simple that a 8 yr old can make it😋, but still l like ur presentation 👍

This looks great, and you have such a lovely personality 🥰 I’m lucky enough to have chickens and fresh eggs in my backyard, so I’m not as scared about adding the egg yolks 😊

I promise if u put 3/4 to 1 cup fresh lemon juice it'll thicken the filling, but this is my favorite pie next to SWEET POTATO

Why put raw eggs in a lemon icebox pie? You are not baking it.🤷‍♀️Just add less lemon juice.
