Gaja’s Lemon Loaf Cake Oven: 180c pre heated Baking vessel: 1 x loaf tin butter / oiled / spray & cook Bake for: +- 45 to 50 min Mix together till light & fluffy: 150g soft butter 1 Cup of sugar Now, whisk in: 3 eggs - at room temperature 1 Table spoon of vanilla essence 1 Table spoon of lemon juice Zest of one lemon 2 Cups of sifted cake flower 2 Teaspoons of baking powder 1 Cup of Milk - added in parts while whisking through the flour mix. TIP: Don’t over mix the cake batter. Poor into the loaf tin, bake, let it cool completely before removing it for the tin. My decorating tip: You can take a few table spoons of sifted icing sugar with a FEW drops of lemon juice, mix till a thick poring constancy and poor / drizzle over the top of the loaf cake, add more lemon zest for color if you wish. Decorate cake plate with thin lemon slices just to “Dollie” it up. Take care NOT to add to much lemon juice to the icing powder or it will be too runny or to large amount, this is just a little icing drizzle for show.
