Let’s Cook Dinner Together! Jollof, Kelewele (Spiced Fried Plantain), Baked Chicken and Green Beans

Because there’s never a day without jollof in my house. I like rice and stew... but I hate it when it is meal prepped. My kids also will insist on eating just white rice with no stew, hence, never ending jollof in my fridge. Here’s another recipe I know you will love
Ingredients:
Jollof
6 large red bell peppers
6 medium sized tomatoes
2 large onions
3 habanero peppers
1 bulb garlic
2 teaspoons curry powder
3/4 cup cooking oil
2 bay leaves
4 cups basmati rice
1.5 cups pan drippings (from previously baked chicken)
2.5 cups water
salt to taste.
String beans Ingredients:
About 2 Lb green beans (string beans)
4-5 cloves garlic, sliced
salt and pepper to taste

In my country, we season overnight as well, or for several hours. I never can understand salt and black pepper as seasoning for anything, especially meat. You cook from your spirit and that makes all the difference. No other cooking programme exudes so much love and, your meals are unique and healthy. No junk! Thank you again and again!

Thank you so much for your video. For the sake of my diabetes I switched to green bell peppers and I stopped eating tomatoes too since I found out how it elevates my blood sugar. I also switched rice to cauliflower shredded in food processor to look like rice. Thank you again for your video and please continue with more cooking time

I love the way you cooked this jollof rice, this is the way we cook it in Nigeria too. I love your kitchen and kitchen utensils, very neat! I love kenke and banku soup (though I can't cook any Ghanian food) but I am going to try this kelewele.

Thank you so much for your beautiful comments. Kenkey and Banku are both made with corn. I think the soup you want to say is okro soup, which looks a lot like how Nigerians make it. I hope to hear back about the kelewele❤️❤️

I love this idea of using techniques of the various versions across West Africa. I was confused when I first saw all your bell peppers because that is not as common for Ghanaian Jollof, but you later confirmed you were switching up your recipe and adding the peppers the way Nigerians would which is great. I am Nigerian, but absolutely appreciate the various versions across the West African nations.

Thank God for you, You wash your hands and food. There are a lot of people on Social Media, but they don't wash their hands or countertop and sometimes food. I would not eat their food no matter how good it looks. I love you and what you cook. Keep up the good, clean work.

Exactly. As for the jollof wars, even I participate in it for the fun. We have a proverb that translates into "everyone loves his mother's palm nut soup" and that is so true!

Bon appetite. String beans recipe is good as oppose to microwaving do blanched. I'm Black American whom enjoy Africa's very different dishes such as stock fish stews or pepper soup. We are blessed to have prepared red rice and plantains from many ethnicities groups including our USA Red rice dish. Good video 👍.

Hi, Kwaan. Well I have had fried, ripeplantian green mashed and also green fried plantain, called tostones add little salt it's delicious but never kelewele Kwaan style I surely will try. You could use a paper towel too. You just don't let it touch the rice.
