🍲 Saag Aloo Method:
Begin by chopping the potatoes into bite-sized pieces, as per Jamie Oliver's Saag Aloo recipe. This dish is a celebration of textures, and the potatoes play a starring role in absorbing all the savoury goodness.
Heat a pan, and add a little oil and chopped onions and garlic. Brown slightly then add the spices of curry powder, ground black pepper, coriander, garam masala, garlic, and ginger for that authentic Indian flavour.
Introduce the chopped potatoes to the fragrant spices, ensuring they are coated evenly. Add the spinach to the mix, allowing it to wilt and infuse the dish with vibrant colour and nutrients.
Your Saag Aloo is now ready to steal the show with its irresistible combination of spices and textures. Add chilli and an oil dressing
Plate up your Saag Aloo, garnish with fresh coriander and parsley, and perhaps a dollop of your favourite chutney and thick yoghurt for that perfect finishing touch. This is a dish that promises to transport you to the heart of India with each mouthful!
🥖 Savoury Potato Couronne Method:
In a large mixing bowl, combine 375g of strong bread flour with 5g of salt. Create a well in the centre and add 10g of dried yeast, softened 75g butter, and 2 eggs. Gradually incorporate 200ml of warm milk into the mixture, kneading until a soft, pliable dough forms.
Allow the dough to rise in a warm place until it doubles in size. This should take around an hour. Meanwhile, thinly slice 600g of potatoes and parboil them until just tender. Drain and set aside.
Roll out the dough into a rectangle and spread the base with chutney then arrange the potato slices and mixed herbs in an overlapping pattern. Sprinkle with a pinch of salt, mango powder for a zesty kick, and generously scatter fresh coriander and parsley over the top.
Roll the dough into a log, seal the edges, and twist it in a circular shape placing it on a baking sheet lined with greaseproof paper. Allow it to prove for a second time until it doubles in size.
Bake the couronne in a preheated oven until golden brown and irresistibly aromatic. The combination of fluffy bread, savoury potatoes, and fragrant herbs is a culinary triumph that will leave your guests begging for more!
