LIANG PI (凉皮) Chinese Cold Noodles

Liang Pi (凉皮) is a traditional Chinese cold noodle dish that uses a ‘flour-washing’ method to extract wheat starch from a ball of dough to leave the protein behind. The starch is then used to noodles which have a very similar slippery texture to rice-noodles, and the protein is steamed to create spongey tofu-puff like pieces. The dish is dressed in a sauce that gives acidity, spice, umami and nuttiness and paired with the crunch of fresh julienned cucumber and blanched bean sprouts!

Pretty amazing traditional methods. Thank-you for sharing the origin of seitan, and the way to make from scratch, both cold noodles and the dish’s protein.

Liangpi is the most magical dish, my favourite Chinese noodle dish by far!... But it's time consuming to make, and I don't know if I have the skills to make it. I hope one day I have the courage to try!

Is it possible to use this process to make the dish that is the gluten and wood ear fungus? I had it at a shangai style restaurant and they took it off the menu!

I’m guessing it’s possible to do the seitan pieces with seitan powder (which I have at home already) but I’m not very experienced in using it so I don’t know how 😅
