TIPS: - Using round aluminum foil molds, you can deep fry the vegetable strips with less batter coated. In this way Kakiage becomes very light and crispy 😋 - You can serve it with rice or Udon noodles for example, as a side dish. Or, you can put on top of rice or Udon noodles to make a bowl dish. It is up to you 😉 - Vegan/Vegetarian people can use Kombu Dashi broth for the dipping sauce 👍

I use Bob's Red Mill all purpose flour, pretty expensive in Japan but works very well for any dishes I make on my channel 😋 amzn.to/3aRHzpC

Amazing 💖So do I! Sometimes their Kakiage is super huge 😋They do takeout for Kakiage and now during this quarantine, they started takeout for Udon, Donburi, etc...!!! We just had Marugame to go Yesterday!!! hehe

good question! Umami is the word to describe the tastiness. For example, if you eat vegetable with salt, it brings up the flavor (Umami) and makes it tasty. We use the world like that.

Eric, "umami" describes a kind of savory, rich, sometimes meaty, flavor. Foods like garlic, onions, mushrooms, cheese, meats, seaweeds, soy sauce, different alcohols used in cooking, etc, have umami and impart it to many dishes (one of the reasons why garlic and onions are so common in dishes all over the world: they build flavor). Umami is a delicious, satisfying taste. Hope that helps. :)

In Indonesia, we have similar food like Kakiage, we call it "Ote ote". The only difference is... I think the amount of oil? Because Indonesian love oily and spicy food.

1 tbsp mirin = 1 tbsp Sake (white wine) + 1 tsp sugar just adding water and 1 tsp. sugar will give the same sweetness if you don't want to add alcohol-kind. btw, sake mirin removes bad smell of ingredients so we Japanese use for any dish to make it taste better ☺️
