Great recipe as winter approaches, and easily converted to vegetarian. Another healthy tip for making soups creamy: soak cashews overnight and blitz at high speed in a blender with some water and maybe a dash of salt. Cashew cream! It will thicken and make this soup creamy without the fat and cholesterol of the cream. Give it a try!
If you cook the broccoli in a seperate pot and let it cool down in a bowl of ice water (like blanching) and adding it then to the rest of the soup, you will get a much brighter green colour after pureeing it ;)

You just saved a hot-town girl who just moved into a cold town. See, I was boiling some eggs for breakfast tomorrow (boil a bunch for the week, your method) and preparing lunch. It was cold, and I wanted some broccoli soup I (thought I) was good to go; but forgot I had no flour (my mom uses it for her broccoli soup) and wanted to cry haha... then I saw the eggs, and I somehow remembered you had a recipe without the flour!! I grabbed my smartphone, saw the video right in the kitchen made this... liked it better this way lol I saved some for lunch, and had some for supper... nothing better for a cold night :D

Nice recipe Laura! I make it almost the same but I skip the potato and add some dill and instead of the cream I use a little teaspoon of low fat Greek yoghurt in my bowl. You are the best and I can't wait for more light recipes :). Love from Europe x
I made this soup today, it was so good. I added carrots 🥕 to it with the celery, onions, garlic and potatoes just because I had some left and didn’t want them to go to waste. One of the best soup recipes I've made and super healthy! I add whatever vegetable I have on hand as well (i.e., carrots or zucchini) and it always tastes great. The potato really makes it so creamy. Everyone that tried it loved it.

I learned adding potatoes to soup from Indonesian cooking (am partly Indonesian) and later on realised it makes soup really creamy. But I also love me some extra creamyness by adding some crème fraîche! I really appreciate your no nonsense and no additives style of cooking, I often turn to your videos when I need to know some basics, so thank you for making them and sharing your knowledge!

just made this soup, and it turned out sooooo good! i didn't know a soup this healthy could taste so good! i didn't have potatoes so i put a little bit of half and half and added some parmesan cheese. Thanx so much for the recipe =)
