Thanks for this recipe! I'm going to start it today. A standby for me is cashew cream. I use it like I would sour cream as a top dressing for Mexican food or on anything you would use a sweetened cream on. I get the Costco organic roasted and salted cashews. (No soaking necessary, but if you start with raw, be sure to soak for at least 2 hours, then dump the soakiing water and proceed with recipe.) Put a cup or more of nuts in a blender, add water almost up to the top, then blend until smooth. If you have an old school blender, soaking the cashews ahead of time will make it easier to come up with a smooth cream; if it's too grainy at this stage, let it sit for a little while, then blend again. Add more water at this stage if it's too thick. You can add flavorings if you like, but for me, it's perfect as it. It lasts well in the fridge.
I go to our local Asian Grocery store for coconut milk with less additives and variety of brands. Its an idea... Can't wait to try this! I'm so grateful to you and your content.
