Most of the time I don't bother to film this sort of thing, but since it's part of my everyday life, I thought some of you may appreciate this side of it. In this video I share three different meals on three different days. The idea is to share a slice of my kitchen habits and how I go about making different meals in the van. Also since I was unsuccessful in harvesting a large game animal this past hunting season, I'm showing you what sort of meat I buy at the store, when such is my luck. All good intentions aside the one meal that didn't make it into the video was a salmon filet with a side of asparagus, carrots, and burdock root. I'll have to try filming that one again later.
If like this sort of content and would like to see more of it let me know in the comments below. Surely I'll be sharing what I do when I start to incorporate wild foods into my meal preparations.

Hi, and welcome to my channel. My name is Joseph and I’ve been living full time in my minivan since late September 2019. Moving into a vehicle was in large part a necessary change and adaptation which I felt I needed to make. I was working though a difficult stage in my life and I felt like this would give me the break I needed to sort things out and rebuild. Along with this decision came an opportunity and new perspective on life, not to mention a real love and appreciation of nomadic living and living with less. So far it’s been quite a trip and I enjoy waking up each day feeling a bit more relaxed and strengthened from it.
I’m based out of British Columbia, Canada. I work primarily in the yoga industry, however my small business does branch into teaching yoga, outdoor education, project management, consulting and some hands on projects. Currently most of my work is undergoing a facelift as readjustments from the Covid-19 pandemic has necessitated a change. Work aside I love to get out into nature to explore wild places and often bring back wild food and medicines. I love foraging for plants & mushrooms, and of course hunting & fishing. I’m also keenly interested in self development, coaching and counselling, cooking and process foods, problem solving, exploring, building, learning, healing, teaching, and most of all, being a Dad. My goal here, is to share and build the journey with all of you and hopefully foster inspiration and elicit a positive change in the world.
The world is my playground, my school, my mother and certainly not mine.

you said SIXTY pounds you put on dmnnn.i put on 30im doing same i make carrot apple juices 2kg csarrots, 2 apples, ginger and lemon. then one meal a day. you want to ditch the carbs. eat wholemeal if your going to eat carbs processed white spikes blood sugars.

@Celtic Highlander&ASeal Yup I use to be 180lbs. In fact that was what I weighed most of my life. I was a lean muscular dude and then I slowly crept up to 245 in a matter of a few years. Sometimes a little self soothing is needed when we don't have the tools or knowhow to deal with emotional stress. At least it was that way for me. In my case I was actually aware of what was happening and yet still not able to fully deal with things in a responsible way. In that way I knew I had to sort out my relationship to emotional stress, and then sort myself out as best as possible there after. It's an ongoing project to be sure. Anyway it sounds like you're working on a food journey of sorts too. That juice sounds pretty amazing. Take care and all the best Joseph

You want to go high carb - whole food plant based. An added bonus is that it is far easier and safer to prepare plant based meals in a vehicle.

I’ve been watching chrome for some time and Joseph would appear once in a while. So I started watching Joseph and now I totally love him. Love watching him cook, and his calming effect he has on me when he just talks about life.

I can relate Joseph. I have gained 60 lbs in the last three years and I am suffering with my knees and back now. I am probably almost 20 years older than you. I have also begun healthier eating and intermittent fasting. Have lost about 12lbs in 2 weeks. Already feel better. Take care of those knees! Dinner looked delicious!

Learned to cook with one pot in college many many moons ago. I am hoping once I get in my van it will all come back to me. I hate that we waste so much food in the sticks and bricks. Cooking like our kids are still living at home. This meal was really appetizing. Thanks for sharing.

May want to look into making your own Mayo. It's really easy. Jar & stick blender takes like 10 seconds. Use whatever oil you like. Ive made it using LTEVOO before most recently used Avocado Oil it came out great. 1 egg, tbsp apple cider vinegar, tbsp of Dijon, tsp salt, 1 1/2 cups oil blend it. I make mine in a wide mouth pint jar. It's good in the fridge for about a month maybe more but its usually gone by then anyway. Of course you can play around with the ingredients to find your preference its just a base starting place. Custom mayos can add another element to your meals. I do keto and it is down right ridiculous & expensive to find a mayo with no soy oil. If you get a stick blender go for one with a metal shaft they are much easier to clean. Mine came with changeable heads so I have a whisk attachment....makes great home made whipped cream less than 30 seconds.

Next time put all the burger condiments in a zip lock bag and you can mix all those ingredients in the zip lock and even form your burger right in the zip lock bag. No mess. That sure looks good wow

Lettuce bun! :) Iceberg works great or romantic as a wrap. Edit, my bad. I saw that he used the portobello mushrooms as a bun! I've cooked them as the actual burger before! Lol!

I've been doing the intermittent fasting along with some other things for 9 months now and lost 50 lbs so far. I feel better! The meals looked delicious! I also like how you finished your van. Take care! -Marshall ✌️

I am coming to your house for dinner that looks amazing. What a great job you did. I just lost 100lbs due to a stressful breakdown but i was only eating once a day if that and small snacks as well. Its not and easy thing to do. BUT you can do it and we are here to support you to. ❤

Years ago I used to cook potatoes over a fire... I'd slice them up..butter, salt, pepper, wrapped in foil...so yummy! Some would be fried on the bottom...again so yummy!

You might want to try going low carb. I’ve been eating low carb for just under three years and have lost 250 pounds. I went from 401 pounds to my present weight of 150 pounds and have been maintaining that weight. I’m staying between 150 and 155 pounds, which my doctor said is perfect for my build. I had all the problems with being that heavy. I was a insulin dependent diabetic, big problems with my knees, sleep apnea, high blood pressure and terrible cholesterol. It’s now all gone! I am no longer diabetic, my A1C went from 12+ to 4.5, my sleep apnea is gone and my blood pressure and cholesterol are at normal levels. I’ve also not any problems with my knees, I now walk 5K three times a week. Low carb is something you might want to try. It was easy for me to stick with. Oh and I also do intermittent fasting. Love your channel. I really enjoy seeing your videos! Thanks!

Yum, Im deffinetly going to give those Portobello Burgers a go. Everything else looked really good too. I love pasta, rice & breads but need to eat less myself to prevent plaque buildup in arteries, bad cholesterol can kill you. So yeah, Im diggin' the healthy meal preps for inspiration, ty.
